A little bit more about the journey behind Proper Roast.

After a triathlon, my Apple Watch noticed my heart rate was reaching 220bpm and my heart was out of sync.

After being told I had to stop pushing myself with exercise, I needed a new hobby to fill the gap. Turns out, drinking coffee wasn’t quite enough, so I decided to get into roasting it instead and Proper Roast was born.

After two years of uncertainty and waiting, I finally had open-heart surgery this year. Who knew a dodgy ticker would eventually lead to a caffeine business?

Process - Washed
Coffee from Baja Verapaz is traditionally washed, with ripe cherries hand-picked by smallholder farmers and depulped the same day. The coffee is then fermented for 24–36 hours, with farmers relying on generations of experience to judge when it’s ready. After washing, the parchment is slowly dried on patios or raised beds, carefully turned to ensure even drying and consistent quality.

We’ve kept this one at a medium roast to let the character of the coffee come through, while still giving it plenty of body and strength for espresso. Expect Bakewell tart sweetness, baked apple and caramel, with relatively low acidity making it an easy-drinking, balanced cup. Great as a straight espresso, but with enough weight and sweetness to work brilliantly with milk too.

The smallholder farmers of Villa Corzo use traditional, artisan methods to produce their coffee, hand-picking ripe cherries before fermenting, washing and sun-drying them. The region’s volcanic soils, abundant rainfall and high elevations of 1,200–1,500 metres provide ideal conditions for slow cherry maturation, helping develop balanced sweetness and complexity.

Roasted for espresso. A medium-dark roast with the depth to stand up to milk, but balanced enough to drink straight. Perfect for your morning flat white, a proper cappuccino, or a no-nonsense double espresso.
