Coming soon...Roasting the new Brazilian Aracaçu Catucai Microlot.

This is an exciting one. A Natural, Aerobic Fermentation process. Coffee cherries are placed under banana and mango trees,  temperature stability is created by protection form the direct heat of the sun.

Cherries are then wrapped in banana leaves and ferment over 72 hours.
