Hi Mersea!!
Hoping you've enjoyed your day. I was in the garden but by 3pm my skin was tingling unpleasantly, so retreated inside. Now thinking I may go out again!!

So .... this Wednesday I'm moving into casseroles for the warmer weather!! Yes, they do work well!😋

A Slow cooked Beef Casserole with Leeks & New Potatoes, lots of Beef with added bacon & splash of cider etc for really scummy tasting but light 'gravy' (Neither a consummé or Jus but is a light mix of flavours & juices from the ingredients & works brilliantly!!)
I believe this is a family friendly dish!! I've a smiley emoji next to the original recipe - when younger my lads clearly liked it!!!!

I am really pleased with the outcome of my various 'tweeks'' & still recommend it!!!

Delicious & ready to eat on arrival but once chilled will wait for reheating till Friday. Freezes very well if that's more convenient.

As always, free delivery on Wednesday on the Island starting from 4.30pm & usually finish by 5.30pm.

Hi Mersea!!!

What happened to the weather?? 😳 I left last Saturday it was very hot ☀️ (25°??) come back today & 🌧🌧🌧. Great British weather!! 😂

So back from North Norfolk (drizzling!) & to my surprise - surpassing all expectations, my 'new' (ok, pre-loved) Jamie Oliver book was waiting for me!!!! Seller said EDD 18.6.26!! Am a happy cook!!!

Anyway, this Wednesday's dish is Shepherd's Pie topped with cheesy Mash potatoes & Leeks (also am making some without leeks, so available if you prefer!!).

Not light on Lamb but has carrots, celery & mushrooms which add a lovely rounded flavour 😋. Smashing family dish with great traditional taste!!
BTW, is Gluten free 😊 & great to freeze!!

Hi Mersea!

Just seen a gorgeous photo of a Mersea sunset on Facebook & WOW! Thinking of our Island ❤️!!

So, I'm on a break in Norfolk, staying in a smashing cottage which boasts 3 recipe books.
Pick up one by Jamie Oliver, published 2007 when he was, in my opinion, producing more straight forward stuff. Well by the time I'd taken 7 photos of recipes I thought I might as well get the book!!! Abe books £3 - bargain!!

I will test some recipes out hoping to include them in my future menus - but testing first important for taste and freezability!! Watch this

Cooking resumes next Wednesday with Shepherd's Pie, topped with cheesey mash & leeks (or just buttery mash if you prefer!!).

Evening Mersea!
Happy with the change in weather today? - time in garden 😀 - I was!!

This Wednesday I'm cooking a lovely dish - Italian Chicken with Olives & Tomatoes. But I'm making a pot with Olives & one without - as I appreciate not everyone likes Olives!!!

2 Chicken thighs per portion, Sauce of tomatoes, sun dried tomatoes, garlic, balsamic vinegar giving a very subtle tang balanced with a little honey which really brings out the tomato taste, really nice dish!
Serve with pasta, or mash potato or my favourite jacket potato!! All lovely!

This dish re-heats & freezes well if you don't wish to eat it Wednesday!

Free delivery on the Island, from 4.30 to 5.30pm Wednesday.

Tomorrow I'm cooking a new recipe from Mary Berry's on line collection! It's straight forward Pork shoulder, whiye wine, tomato & mixed vegetable casserole. Lovely straight forward & family friendly!! Gluten & dairy free!

Evening Mersea!
Nice weather today 😎 till this evening☂️!

This Wednesday I'm cooking 2 beef options - either a gorgeous slow cook beef casserole - a traditional recipe using casserole beef, or choose a Chilli con Carne made with small pieces of lean beef rather than minced beef (recommended way to serve by Delia Smith!). Chilli, also slow cook for tender beef.

These are lovely family casseroles. Serve with baked potato (my favourite!!) or rice (more traditional!).
Great for freezing too!!

Hi Mersea!
Sunny but chilly this weekend 🫤 bit weird me thinks!! But it's April, so I'm going with joy at the sunshine!! Enough of our odd weather!

This Wednesday I'm cooking an amalgamated recipe - a gorgeous ragu by Gino (with added garlic & cubes of bacon as per Delia), mixed into penne pasta (but not padded out with pasta!!) with a silky bechamel white sauce over the top with a topping of Italian cheese! It's straight forward but oh so tasty!! It's been tried & tested & I recommend it 😋
Would be great for a hungry family!
Nice with salad or vegetables, we went with green vegetables!!
Not GF, contains dairy.

Evening Mersea!

What changeable weather!!
Monday it was -6° & today sun (even if cold!!). Gotta be Britain!!

This Wednesday I'm cooking a gorgeous slow cooked beef casserole - a traditional recipe using shin of beef, (highly recommended by Delia Smith!). Tendet beef cooked with onions & carrots. 😋
This is perfect comfort food for this chilly weather.

Lovely served with mash potato or with baked potato (my personal favourite!!). I can cook this for you - baked to perfection in olive oil with freshly cracked black pepper & Himalayan rock salt.
