ONION BREAD RECIPE
Ingredients:
For the Dough:
3 cups all-purpose flour
1/4 cup sugar
1 tbsp instant yeast
1 tsp salt
1/2 cup warm milk
1/4 cup melted butter
1 large egg
1/2 cup warm water (as needed)
For the Sweet Onion Filling:
1 cup sugar (200g)
1/2 tsp salt (2.5g)
1/4 cup cooking oil
1/3 cup water
1/2 cup chopped onion leaves (green onions/sibuyas dahon)
2 cups all-purpose flour
For the Egg Wash:
1 egg, beaten
1 tbsp milk
Instructions:
Prepare the Dough
1. In a large bowl, combine the flour, sugar, yeast, and salt.
2. Add the warm milk, melted butter, and beaten egg. Mix until a dough forms.
3. Gradually add warm water as needed and knead the dough for 8-10 minutes until smooth and elastic.
4. Cover the dough and let it rise for 1 hour or until doubled in size.
2. Make the Sweet Onion Filling
1. In a skillet over medium heat, add the cooking oil.
2. Stir in the sugar, salt, and water. Cook until the sugar dissolves completely.
3. Add the chopped onion leaves and mix well.
4. Gradually add the 2 cups of flour to the mixture, stirring continuously until it thickens and forms a soft, paste-like filling.
5. Turn off the heat and let the filling cool completely.
Assemble the Pig Pie (2 Large Loaves)
1. After the dough has risen, divide it into 2 equal portions.
2. Roll out the first portion into a large rectangular shape (about 12x8 inches).
3. Spread half of the sweet onion filling evenly across the surface.
4. Roll the dough like a jelly roll (or brazo de mercedes style) from the longer side, making a long log.
5. Place the rolled dough seam-side down on a baking sheet lined with parchment paper.
6. Repeat the same for the second portion of dough.
7. Cover and let them rise for 30 minutes.
Bake the Pig Pie
1. Preheat your oven to 350°F (175°C).
2. Brush the tops of both loaves with the egg wash.
3. Bake for 25-30 minutes or until the tops are golden brown and the bread sounds hollow when tapped.
4. Once out of the oven, brush the tops with melted butter for extra softness.
5. Slice and Serve!
Allow the loaves to cool slightly before slicing them into thick pieces.
You’ll see the delicious, sweet onion filling swirled inside the soft, fluffy bread.
This bread is perfect for breakfast, merienda, or as a holiday treat!
Pro Tip:
For extra softness, cover the freshly baked loaves with a clean towel for 10 minutes after baking.
