Kefir making. I use a fermentation jar & milk from . I bought my grains from Kombucha Organic and they're really productive.
- **Kefir grains** (about 15-30 grams)
- **Milk** (whole, semi-skimmed, or non-dairy)

- Glass jar (1-litre or larger)
- Plastic or wooden spoon (avoid metal)
- Cheesecloth or coffee filter
- Rubber band or string
# # # Instructions
1. **Prepare the Jar**:
Clean the glass jar thoroughly.
2. **Add Kefir Grains**:
Place the kefir grains into the jar.
3. **Pour Milk**:
Add about 500 ml of milk to the jar, leaving some space at the top.
4. **Mix Gently**:
Stir gently with a plastic or wooden spoon to combine.
5. **Cover the Jar**:
Place cheesecloth or a coffee filter over the top and secure it with a rubber band. This allows airflow while keeping contaminants out.
6. **Ferment**:
Leave the jar at room temperature (ideally around 20-25°C) for 12-48 hours. The longer it ferments, the tangier it will be.
7. **Check Consistency**:
After the desired fermentation time, check for a thickened consistency and a tangy smell. You'll see some separation like in my photo.
8. **Strain the Kefir**:
Use a strainer to separate the kefir grains from the liquid.
9. **Store or Use**:
The strained liquid is your kefir. You can refrigerate it or use it in recipes.
10. **Reuse Grains**:
Repeat the process for your next batch or cover with milk, seal the jar & refrigerate until you want to make more.
