Ever spotted tiny white crystals in your cheddar and wondered what they are? 🧀
Those crunchy bits are called 'calcium lactate' crystals and are often found in well-aged cheeses.
Once mistaken for a defect, they're actually a sign that the cheese has been given time to mature and develop flavour, adding a satisfying crunch and richer taste experience.
Next time you spot them in a piece of Collier's, you'll know they're a badge of quality.
