ELDERFLOWER PANNA COTTA ๐ŸŒผ๐Ÿฎ

elderflower panna cotta ft. a can of dalston's in case anyone needed an excuse to make dessert on a tuesday

150ml whole milk
250ml double cream
40g caster sugar
4โ€“6 large heads of elderflower
1 tsp vanilla essence (or vanilla pod if you can find one)
2.5 gelatine leaves

Method:
Combine the milk, cream, sugar and vanilla in a saucepan. Pop the elderflower heads in flower-side down and bring to a gentle boil over a medium heat. Take off the heat, drape a tea towel over the pan and leave to stand for 30 minutes so the elderflower and vanilla can fully infuse. Remove and discard the flower heads.

While the cream is infusing, submerge the gelatine leaves in cold water for 5 minutes until soft and pliable. Lift out and squeeze away any excess water.

Return the pan to a low heat and warm the infused cream through gently. Do not let it boil. Drop in the gelatine and whisk until fully combined. Take off the heat, cool to room temperature, then pour evenly into moulds, glasses or ramekins.

Fridge for 4 hours until set. Decorate with a few reserved flowers, crack open a Dalston's Elderflower and enjoy.

STRAWBERRY ELDERFLOWER FIZZ ๐Ÿ“๐ŸŒธ

elderflower szn is here and we went full forager about it. made our own elderflower syrup, steeped it for 24 hours and turned it into this. a mocktail that is genuinely too pretty to drink (we drank it anyway)

ELDERFLOWER SYRUP
Makes approx. 500ml, keeps refrigerated for 4 weeks.
500g sugar
700ml water
15โ€“20 elderflower heads (fully open and fragrant)

Method:
Bring the water and sugar to a gentle simmer, stirring until the sugar fully dissolves. Take off the heat.
Add the elderflower heads into the hot syrup.
Cover and leave to steep for 24 hours at room temperature. Go up to 48hrs if you want a stronger flavour.
Pour through a muslin cloth or tea towel-lined sieve into a clean jug. Squeeze the cloth to get every last drop out.
Pour into sterilised bottles or jars (run through a hot dishwasher cycle or fill with boiling water and leave for a few minutes). Done.

MOCKTAIL
Strawberries (for purรฉe + garnish)
Dalston's Elderflower
Homemade elderflower syrup
Lemon slices
Ice
Elderflower petals to garnish

Method:
Blend strawberries with a small splash of water, then strain through a sieve to remove the seeds.
Pour the strawberry purรฉe into the base of a tumbler glass.
Add a big ice cube and a lemon slice.
Pour in the elderflower syrup.
Top with Dalston's Elderflower.
Finish with a sliced strawberry on the rim and elderflower petals across the surface.

VANILLA MATCHA CHERRYADE ๐Ÿ’

made a vanilla cherry compote, whisked some matcha, added dalston's cherry soda. A flavour combo we did not see coming but the tart, earthy, a little sweet, very fizzy WORKS. A must make! full recipe below.

Ingredients
300g fresh or frozen cherries
100g caster sugar
1 tablespoon vanilla bean paste
1/4 teaspoon high-quality matcha powder
30ml hot water (cooled to approx 70ยฐC)
1 can Dalston's Cherry Soda
Ice cubes
Fresh cherry to garnish

Method
-Add cherries, sugar, water and vanilla bean paste to a small saucepan with a splash of water. Reduce on a medium heat until thickened and syrupy. Pour into a mason jar and cool completely.
-Boil your water and let it cool down. Matcha hates boiling water. Respect the matcha.
-Add matcha powder to a bowl, pour over the cooled water and whisk with a bamboo matcha whisk until smooth and frothy.
-Spoon vanilla cherry compote into the bottom of a tall glass.
-Add ice.
-Pour over Dalston's Cherry Soda.
-Pour matcha over the top.
-Garnish with a fresh cherry because we can!
