We are a family business dedicated to the welfare of the poultry we rear, the wellbeing of our staff, and the satisfaction of our customers. Back then, it was known as Green Label Foods, however, in 2006 we changed our name to Gressingham Foods after our best selling product, the Gressingham Duck.

This month's Supper Club Secret come from Richard in Stockport, : "Along with our Whole Duck rubbed in Chinese 5 spice, we used poached pears from our tree, infused them also with Chinese 5 spice, star anise and duck juices. We served this with Jasmine rice, port, duck jus and pak choi” 🍚 πŸ₯¬ πŸ§‚

If you love classic Tex-Mex pulled pork, switch it up this week with this spicy, rich duck version. 🌢️

Pick up a pack of our duck legs in stores and save the recipe below:

Ingredients
2 Gressingham Duck Legs
1/2 tsp ground cumin
1/2 tsp paprika
200g sweet chilli sauce
2 large handfuls of salad leaves
2 spring onions, finely chopped

Method:

1. Preheat the oven to 180Β°C/Fan 160Β°C/Gas Mark 4. Prick and season the duck legs with salt and pepper on both sides. Mix the cumin and paprika together in a bowl and rub onto the legs.

2. Place the duck legs on a wire rack in a baking tray and place into the preheated oven. Cook for about 1 hour 10 minutes, then remove them from the oven and lower the temperature to 150Β°C / Fan 130Β°C/ Gas Mark 3. Transfer the duck legs to a clean roasting tray and baste them with the chilli sauce. Return to the oven for another 15 minutes.

3. Take the duck legs out of the oven and allow them to cool until you can handle them. Shred the duck meat and skin from the bones with two forks.

4. Divide the salad leaves between two plates and top with the shredded sweet chilli duck. Garnish with the sliced spring onions and more sweet chilli sauce.
