What's happening this week? Welcome to Australasia!

If you think you know Australian and New Zealand wine, think again. We’ve just cracked open three absolute game-changers that are completely rewriting the rulebook, now open on the shelves at Bouquet!

Here is the lineup you need to try this week:

⚡ 'Tuff Nutt' Pet Nat (Delinquente, Australia): Natural, cloudy, and wildly fun. This is a tropical fruit explosion with gentle, natural fizz. Perfect terrace juice. We have been huge fans of wines since they visited us last summer!

🍏 Trinity Hill Chardonnay (Hawke’s Bay, New Zealand): Pure elegance. Forget the heavy oak of the past—this is crisp, stony, and packed with white peach and citrus blossom.

The Bouquet Breakdown: Let’s talk about the Chardonnay comeback

If your immediate reaction to the word "Chardonnay" is a flashback to the 1990s—thick, heavily oaked, yellow wine that tasted like liquid buttered toast—we need to talk. Lots of people tell us they don't like Chardonnay, let us convince you that you do!

Chardonnay has had a massive glow-up, and it is officially one of the most exciting, versatile grapes on our shelves.

Here is what you actually need to know about the chameleon of the wine world:
1. It’s a Blank Canvas
Chardonnay itself is a relatively neutral grape. It doesn't have the intense, instantly recognizable aromas of a Sauvignon Blanc or a Riesling. Instead, it takes all its personality from where it is grown and how the winemaker treats it.

2. It ranges in style, from a crisp, citrus, cool climate Chablis or those rich, buttery textures (although most winemakers use subtle hints of oak - the 90's style has gone!) Many Sparkling wines across the world contain Chardonnay- including some Champagnes!

3. Texture - Buttery Secret: Malolactic Conversion
Ever wonder where that creamy texture comes from? Winemakers often let Chardonnay (and some other grapes) go through a natural process that converts sharp, green-apple acidity (malic acid) into smooth, dairy-like acidity (lactic acid). It’s literally the same acid found in milk—which is why it feels like velvet on your tongue!
