Well yesterday was something else… no sitting outside tonight… it’s warm enough but it keeps raining…. Still here is a fav pasta supper. pasta Ragu, this time Pork Mince with Pappardelle and a traditional soffit of carrots celery and onions… and a good red wine my choice is Nero D’Avola from Sicily…. If you make enough there be more for tomorrow Buon Appetito

Tagliatelle Ragu is a clear favourite of ours a handful of ingredients fresh and easy to cook red onion 2 cloves of garlic crushed celery and carrot diced to similar size sweat together in olive oil until soft.
Add 250g of minced pork and simmer until browned. Make sure the first liquid you add is the red wine half a glass to allow the alcohol to evaporate then add 2 tablespoons of tomato purée mixed in a glass with a little more wine before adding to the pan. In a large pan bring water to boil add a little salt when boiling add your pasta. Cook for 1 minute less than it says on the packet because it will continue cooking even when removed from water. If your sauce starts to dry you can always had a ladle of pasta water. When pasta is cooked to al dente remove from water and add to sauce gently mix so pasta is coated with the sauce and serve with grated Parmesan and basil

Bank Holiday weekend has kicked off with this Antipasti of Asparagus gratin with Walnuts. Just a handful of ingredients served 2
350 g of Asparagus spears
20mls white wine (good excuse to open a bottle and talk while cooking)
20 g butter
25 g of shelled and crushed Walnuts
50 g grated cheese I used a hard goats cheese
Some chopped parsley and squeezed lemon and wedge to decorate
Served here with a slice of toasted Ciabatta
Method:
Boil or steam asparagus for 10 mins having first broken the tough end off
Drain on kitchen roll
Grease a dish big enough to lay asparagus in one layer pour over white wine cover with cheese and sprinkle walnuts
Dabs of remaining butter then …
In a pre heated over at 200c gas 6
Bake for 10 mins until cheese has melted
Serve hot with scatterings of parsley squeezed lemon juice and ground pepper
Serve slice of Ciabatta
Buonissimo

Continuing the veg session, here we have a tasty Salad served with pan fried Tuna steaks
Insalata di Radicchio Cecil e Gorgonzola

Ingredients:
Radicchio Head
Conference Pear
1x 400g canned Chickpeas rinsed and drained
A handful of crushed chestnuts or crushed walnuts
3 oz of Gorgonzola cheese roughly chopped
Dressing of 2tbsp of extra virgin olive oil to 1tbsp of balsamic vinegar seasoned with sea salt and ground black pepper
Method:
Remove leaves from head. Chopping larger leaves in half. Core and slice pear.
Place all ingredients into a large bowl and toss with your hands.
Pour over the dressing gently toss again to coat. Place in a serving dish and use immediately on this occasion I’ve pan fried tuna steaks 2 mins either side but leaving a thin line of dark red tuna in the middle.
All quick simple and tasty for a healthy sunshine lunch

Quick simple 4 ingredients 20 mins fabulous fresh zesty lunch or supper
Pasta with courgettes and lemon
Ingredients
1 courgette grated
1 lemon
2 tbs olive oil
Pasta for two your choice
Method
Boil a pan of water for pasta
Cook pasta as per instructions minus 1 min.
Grate courgette squeeze out as much moisture as you can
Heat oil and add courgette to frying pan and stir
Add zest of lemon and juice
When pasta is nearly cooked add to courgette mix toss for 1 minute season and serve with bread
