Shrouded in mystery, fragments of a once great boreal woodland that stretched around the entire Northern Hemisphere are unique survivors of a lost world.

Scotland has some of the last remaining areas of this highly unique ecosystem and here at Birkentree we have access to Highland birch trees that confound the usual lifespan by some 200 years!

We recently attended a genuinely fascinating evening at the Romanian Consulate in Edinburgh entitled; ‘Whisky- Between diplomacy and technology’ which really resonated with our own journey into taste and flavour perception.

We were kindly hosted by our friend and supporter to showcase our spirit enhancer along with voices from diplomacy, biotechnology, DNA research, and the wh**ky world for an exploration of taste, mediation, and technology.

The **kybaba taste Intelligence app was a revelation! In VERY basic terms, typing in answers to seemingly unrelated questions surrounding feelings, attitudes and even social interactions ultimately leads you to bespoke personal analysis of your taste perception and favoured whiskies! ….it works!!! ….it’s magic! ✨

It was a gathering of ideas, disciplines, and perspectives, united by a shared fascination with wh**ky and the complexities of taste and experience, which enriched us to our core.
