Still cutting whisky and spirits with water?

Whilst water does an adequate job of opening up aromas and reducing a spirits ‘bite’, it also washes out flavour and reduces all important texture very quickly.

There is another quintessentially Scottish means of experiencing so much more within the glass. Highland Silver Sap is a light, almost ethereal liquid harvested from the ancient Highland Silver Birch. Once a year in early Spring, arrives the fleeting spectacle of the Silver Sap harvest here in the Highlands of Scotland, lasting a brief 2-3 weeks it has been celebrated for the last 4000 years.

FASCINATING FACT - Uisge beithe is the Gaelic for birch sap meaning ‘the water of life’….sounds familiar right? Our ancestors believed that its arrival in Spring heralded rebirth and a return of life to the landscape, this predates whisky (Uisge beatha) by several thousand years!!!!

A reunion of liquids with a shared sense of place joined together within the glass for an experience rooted in connection and increased enjoyment 🥃✨
