Our October special is Piranha - a herby pineapple piri piri! It's got smoked pineapple and whole lemons for a delicious twist on the classic sauce. Medium heat provided by the birds eye (aka piri piri) chilli.

This is the final version of the piri piri we've been trialling over the last year or so! Thanks for all your feedback x

Some big pan action this week. Still getting used to it so taking scaling cautiously. All my jam recipes are scaled according to the sugar, currently I'm at one 25kg bag per batch - today will be the first time I'm going past that to 30kg! Goal is to be able to do 50kg batches but that makes the prep and filling stages much longer of course

Scaling up 📈📈📈 This week we've had a 8kW hob installed and a new 100L stock pot delivered. Growth is gradual but speeding up each year. This pan + hob should allow us to cook 400 jars of jam in the same amount of time as 200 on our old hob! Next up is to source a filling machine ✌️

Our September Special is here! Malamango Chilli Jam is made with organic Spanish mangoes that ripen in September, sourced through . It's medium heat chilli from bird's eyes, plus lots of tingly Sichuan peppercorns for that distinctive "mala" sensation. Great with all the usual places you'd use a mango chutney!

It's a pain to process loads of fresh mangoes so we keep this one limited edition 🫨 Grab it while you can!
