Hott. X Pelo del Perro
A salsa verde-style sauce has been a WIP for a while, and when we came across this mezcal from Pello del Pero, it felt like the missing piece.
The mezcal itself is bright and fresh on the nose - light smoke, citrus, green pepper, a touch of pineapple.
We knew those notes would sit well in the sauce we’d been building.
- Jalapeños for soft heat.
- Charred onion and garlic for sweetness and body.
- Lime to keep it bright and clean.
The mezcal brings a light, smoky note that balances the brightness of the sauce.
