A pioneer, leader and respected authority in the cheese industry, Kristen has spent over 15 years immersing herself in the techniques and flavours of the ancient art of cheese making. Kristen’s cheese is in great demand, supplying the likes of Ester, Fred’s and Aria and has been a regular stallholder for some years at Carriageworks. Her recipes have been featured in various food magazines and publ

ications including Gourmet Traveller & Cornersmith’s first cookbook. In 2018, Kristen was nominated for a Delicious Produce award, a testament to her philosophy of slow, carefully hand crafted cheese, using only high quality ingredients. Her buttermilk ricotta has a cult-like following around Sydney and is revered Australia-wide. Establishing herself in the echelons of the food world and as one of Australia’s leading cheese educators, she is a regular teacher at Cornersmith, Daylesford Longhouse and Moonacres cooking school. One of her most prized achievements in 2018, when she was asked to present at the feminist talks and ideas festival ‘All About Women’, becoming the first person to make cheese at the Sydney Opera House.

We found a whey to keep ourselves busy (and suitably nourished) while waiting for the Lindisfarne causeway to reopen.

Homemade halloumi, fried in the back of the car and eaten warm with smoky baba ganoush. Not a bad way to pass the time.

A small, intimate mozzarella & burrata class last Saturday - slow, calm, and full of joy. We spent the day making cheese, stretching curds, sharing stories, and enjoying a leisurely lunch together around the table.

These quieter classes are always some of my favourites.

I have a couple of summer classes coming up and I’m looking forward to celebrating the season with all the beautiful produce arriving now. Think ripe tomatoes, crisp cucumbers, fragrant herbs & leaves, and the very best of summer on the lunch table alongside freshly made mozzarella and burrata.

Gorgeous workshop on Saturday - thank you to everyone who joined me. It was a gorgeous spring day, sun shining, lots of delicious cheese and stories were shared. A few notes on the pics:
1. This moment at the end of the day was so special to be part of. You know when you have a party and all your friends huddle around a table, chatting and laughing and no one wants the party to end. This 🙌🏼 was that moment.
2. Lunch of the day - anchovy butter, cultured butter and focaccia. Baked smooshy ricotta, labneh with nigella and sumac. Leafy herby salad with roast radishes (thank you for growing the most delicious produce). Strawberry whey sodas.
3. Eternally grateful to for letting me use her beautiful studio to host my cheese making workshops. Thank you again Jess 🙏🏻♥️
