Korean Fried Chicken with Gochujang Glaze Crispy double-fried chicken glazed with a sweet, spicy, garlicky sauce.

INGREDIENTS
• 250 grams boneless, skinless chicken breast
• 0.5 cups cornstarch, divided
• 0.5 teaspoons garlic powder
• 0.3 teaspoons ground ginger
• 0.5 teaspoons kosher salt, divided (plus more for seasoning)
• 0.4 teaspoons ground white pepper, divided
• 0.4 teaspoons baking powder, divided
• 1 garlic cloves
• 0.3 piece fresh ginger (½-inch)
• 3 tablespoons cold water
• 0.8 teaspoons soy sauce or tamari
• 0.8 teaspoons rice vinegar
• 1.3 cups canola oil, for frying
• 2.5 garlic cloves (for glaze)
• 0.8 teaspoons canola oil (for glaze)
• 2 tablespoons soy sauce or tamari (for glaze)
• 2 tablespoons packed light brown sugar (for glaze)
• 1 tablespoons rice vinegar (for glaze)
• 0.8 teaspoons cornstarch (for glaze)
• 0.8 teaspoons water (for glaze)
• 0.5 tablespoons gochujang paste (for glaze)
• 0.5 teaspoons toasted sesame oil (for glaze)
