We are getting loads of eggs at the moment. Here is a lovely recipe to use a few.
🍑 Clafoutis: A rustic French classic!
Not quite cake, not quite custard—clafoutis is in a league of its own! Lightly golden, creamy, and bursting with sweet peaches and raspberries, it’s the kind of dessert that feels fancy but takes almost no effort. 🍓🔥
INGREDIENTS
• 3 Pace Farm eggs
• ½ cup (100g) caster sugar
• 1 cup (250ml) milk
• ½ cup (125ml) thickened cream
• 1 tsp vanilla extract
• ⅔ cup (100g) plain flour
• Pinch of salt
• 2 ripe peaches, sliced
• 1 cup fresh raspberries
• 1 tbsp butter (for greasing)
• Icing sugar (for dusting)
METHOD
1. Preheat oven to 180°C. Grease a 22cm baking dish with butter.
2. In a bowl, whisk Pace Farm eggs and sugar until pale and creamy.
3. Add milk, thickened cream, and vanilla, whisking until combined.
4. Sift in the flour and salt, whisking until smooth and lump-free.
5. Pour a thin layer of batter into the baking dish and bake for 5 minutes until slightly set.
6. Arrange peach slices and raspberries over the batter, then pour the remaining batter over the top.
7. Bake for 35–40 minutes, or until puffed and golden. The centre should be just set but slightly wobbly.
8. Let cool slightly before dusting with icing sugar.
