🥗 Recipe: Green Mizuna Salad with Miso Dressing
Ingredients:
4 cups fresh mizuna greens from Salerno’s Amalfi Coast
1 small cucumber, thinly sliced
1 small carrot, julienned
2 tbsp toasted sesame seeds
1 scallion, finely chopped
For the Miso Dressing:
1 tbsp white miso paste
2 tsp rice vinegar
1 tsp soy sauce
1 tsp honey (or maple syrup)
1 tbsp sesame oil
1 tbsp olive oil (Italian, extra virgin)
Squeeze of fresh lemon juice
Instructions:
In a small bowl, whisk together the miso dressing ingredients until smooth and creamy.
In a large salad bowl, combine the mizuna, cucumber, carrot, and scallion.
Drizzle the dressing over the salad and toss gently to coat.
