Lunchbox snacks just got so much easier to make from scratch using Glenilen Farm’s new BIG squeezable live natural yoghurt pouches!
Give these flavoursome Spinach, Yoghurt and Feta Muffins from a go 🤤
Ingredients
200g self-raising flour
1 teaspoon baking powder
1/2 teaspoon bread soda
1 medium egg
60g baby spinach, chopped
100g feta cheese
40ml rapeseed oil
150ml Glenilen natural yoghurt
80ml milk
Method
Preheat your oven to 180°C (160°C fan) and line a muffin tin with 8 paper cases.
In a bowl, whisk together the egg, oil, and Glenilen yoghurt.
Sieve in the flour and raising agents, then mix to combine.
Add the milk and stir to form a smooth, slightly soft batter.
Fold in the chopped spinach and crumble in 80g of the feta, mixing gently.
Divide the batter evenly between the lined cases.
Sprinkle over the remaining feta and bake in the preheated oven for 25–30 minutes, or until golden and set.
