Roasted seabass with lemon and thyme 😍…
A simple, fresh dish that’s perfect for a light lunch or summer dinner.
Ingredients
* 2 whole sea bass, cleaned and scaled
* 1 lemon, sliced
* A handful of fresh thyme sprigs
* 2 tbsp olive oil
* Sea salt
* Freshly ground black pepper
* 2 cloves garlic, sliced
Method
1. Preheat the oven to 200°C (180°C fan).
2. Pat the sea bass dry and score the skin 2–3 times on each side.
3. Rub with olive oil and season generously with salt and pepper.
4. Stuff the cavity of each fish with lemon slices, thyme sprigs, and garlic if using.
5. Place on a lined baking tray and scatter any remaining lemon and thyme around the fish.
6. Roast for 20–25 minutes, depending on the size of the fish, until the flesh flakes easily with a fork.
7. Serve with roasted new potatoes, a green salad, or seasonal vegetables.
Serving tip: Finish with a squeeze of fresh lemon and a drizzle of good olive oil just before serving. 🍋
