It’s peak elderberry-picking season, so we’ve been getting prepared to ward off autumnal coughs and colds by making some elderberry syrup.
This is the rough recipe we use..
500g fresh elderberries, washed
800ml water
1 inch thumb of ginger
cinnamon stick
1 tsp whole cloves
Approx 200g honey
Add the elderberries, water, ginger, cinnamon and cloves to a saucepan. Bring to a boil then simmer for 30-40 mins until the liquid has reduced by about half.
Remove from the heat and let the mixture cool until it’s warm, not hot (high heat can impact the honey’s beneficial enzymes).
Strain through a sieve, pressing the berries to release all the liquid.
Mix in the honey until fully combined.
Pour into clean sterilised bottles and when cool store in the fridge for up to 3 months.
*do not eat raw elderberries
** do not give syrup to children under 1yr due to the honey
