Caribbean cuisine was built on the knowledge and leadership of women.

During the Transatlantic Slave Trade, African women carried generations of culinary knowledge with them — farming, seasoning, preservation, and communal cooking. In the Caribbean they became responsible for feeding families and communities, transforming limited ingredients into deeply flavourful dishes that still define the cuisine today.

After emancipation, women continued to shape Caribbean food culture as market traders and street food vendors. Across islands like Antigua and Barbuda, Jamaica and Barbados, “market women” and higglers grew produce, cooked meals and sold food to their communities — long before pop-ups, food trucks or modern street food businesses existed.

Recipes weren’t written down. They were passed through generations of mothers, grandmothers and aunties in yards, kitchens and community gatherings — tasting, seasoning, and teaching through experience.

While European culinary history often celebrated male “chefs”, Caribbean cuisine was built and preserved through the hands and knowledge of women.

Every plate carries that legacy. 🌴

☘️ The Irish–Caribbean Connection

St. Patrick’s Day is celebrated around the world, but many people don’t realise that Irish and Caribbean history has been connected for centuries.

During the 1600s, Irish people arrived across the Caribbean during the period of British colonial expansion, settling on islands such as Montserrat, Barbados and Jamaica. Over time these communities became part of the cultural fabric of the region.

Montserrat is even known as the “Emerald Isle of the Caribbean,” and is the only place outside Ireland where Saint Patrick’s Day is a national holiday — celebrating both Irish heritage and Caribbean identity.

As cultures mixed, so did food. European cooking traditions blended with Caribbean ingredients, spices and produce, helping shape the bold, comforting flavours that define Caribbean cuisine today.

At Black Pineapple, we love celebrating the stories behind food.

The countdown has started….

Can’t wait to share all the exciting things we have lined up 👩🏾‍🍳

Stepping back was hard… but burning out was harder.
As chefs, we pour everything into our craft, but sometimes the fire runs too hot. Taking a break reminded me of the importance of slowing down, reconnecting with family and friends, and showing myself the same care I give to others.

Now I’m returning to the kitchen with a clearer mind, a fuller heart, and a deeper love for what I do.

Here’s to balance, gratitude, and honoring the journey.
Back and better — Black Pineapple is ready to serve again. 🖤🍍✨
