Who is ready for a sunny day salad that isn't a boiled egg & rolled up cold meat? πŸ₯šπŸ˜‰

Here's my 15 minute Summer Salmon, packed with big flavour combos & bright colours it's the perfect lunch for this gorgeous heatwave πŸ₯—β˜€οΈ

Ingredients:
1 x Fillet of Salmon
1/2 Can of Chickpeas
2 x Tsp Harissa paste
Mixed leaves
Pomegranate Seeds
Feta Cheese
Balsamic Glaze

Today is my niece's birthday & her favourite thing for me to cook is lentil soup...so I thought there's no better time to share this one πŸ₯£

This is no normal lentil - the beef stock & cayenne pepper max out the flavours & make this a firm family favourite!

Ingredients I use:
400g diced onion
700g diced turnip
5-6 diced carrots
500g red lentils (rinsed)
4L boiled water
6 beef stock cubes (crumbled)
1-2 tbsp salt
1-2 tbsp cracked black pepper
1-2 tsp cayenne pepper
Sprinkle of dried mixed Italian herbs
Optional - shredded cooked chicken or protein sourdough if you want to hit the macros πŸ˜‰

Hit save if you agree lentil soup shouldn't be boring 🐞

🍳 Crispy Chilli Eggs 🍳

Loved making this absolute cracker of a weekend brunch, it has all the flavour & is ready in no time ❀️

Here's everything I used:
Eggs
Chilli oil
Spinach
Cherry Tomatoes
Feta
Sesame Seeds
Hot Sauce

Address to a Haggis (Wellington) πŸ΄σ §σ ’σ ³σ £σ ΄σ ΏπŸ’™

Hosting a Cookalong Class on Burns Night is a rare treat & such a lovely way to celebrate a Scottish tradition that often is forgotten!

Rather than throwing everything into a pot, watching it boil & call it a cooking class I created this bespoke menu for a couple of years ago!

Together we made these delights, straight from the comfort of our own kitchens:
Haggis Wellington
Garlic Totties
Buttery Neeps
Homemade Peppercorn Sauce
Class Cranachan

Not only did we cook up a storm but since this was a teambuilding event we had competitions, some singing & a lot of laughs too πŸ’™

πŸŽ„ Swipe for a photoshoot of my Hasselback Parsnips with Prosciutto, Brie & Honey πŸŽ„

I dare you to upgrade your Christmas dinner to include these parsnips & you’ll blow your guests away❀️

Ingredients:
Parsnips
Brie
Prosciutto
Runny Honey
Pomegranate Seeds

Instructions:
Peel & trim the parsnips then cut in half lengthways
Slice at half centimetre gaps along the vegetable (don’t cut all the way through, just about halfway will do)
Roast in the oven for 30mins at 180
Remove from the oven and alternate a little bit of prosciutto then Brie in each of the gaps
Drizzle in honey then pop back in the oven for 5-10mins
Sprinkle over your pomegranate seeds and a final drizzle of honey then enjoy

Absolute class flavour combo for everyone to enjoy!
