Crispy mashed potato balls 🥔

* 700 grams chilled mashed potatoes
* 130 grams cheddar cheese, shredded
* 12 grams chives, chopped
* Pepper, to taste

Breading:
* 65 grams flour
* 2 medium eggs, beaten
* 135 grams panko bread crumbs
* 40 grams Parmesan cheese, grated

INSTRUCTIONS
1. Combine the filling ingredients in a large mixing bowl and stir to mix well.
2. Prepare the breading station with one bowl of flour, one bowl of beaten eggs and one bowl of panko bread crumbs mixed with Parmesan cheese.
3. Dust your hands with flour and use an ice cream scoop to measure the balls. Pat them gently to form them into balls and roll them in the palm of your hands to get them perfectly round.
4. Dust them immediately with flour and set aside. Repeat until you have 24 flour-dusted balls.
5. Drop a ball into the egg mixture and use a spoon to flip it over until fully coated. Lift the ball with the spoon and tilt the spoon at the edge of the bowl to drain off any excess egg.
6. Drop it in the panko mixture and use another spoon to dredge it fully. Pat in any excess bread crumbs. Set aside and repeat with the remaining balls.
7. Fry in batches in hot oil over medium-high heat until golden brown on all sides, about 3 minutes. Drain on paper towels.
8. [If baking] Bake at 200°C for 5-10 minutes or until browned.
9. Dish and serve hot.

Pak Choi And Mushrooms With A Miso Dressing 🥬

INGREDIENTS

* 250 g baby pak choi cabbage trimmed
* 150 g mushrooms sliced
* sesame oil

Miso Dressing

* 1 Tbs of white miso paste
* 2 Tbs extra virgin olive oil
* 1 Tbs red wine vinegar balsamic also works well
* 1½ tsp lime juice juice
* pinch of dried chilli flakes optional

INSTRUCTIONS

* To make the dressing mix all of the dressing ingredients together in a bowl and whisk until it has emulsified I normally add these to a jar and shake)
* Heat a frying pan with a lid for a couple of minutes until it starts to smoke. Add a few drops of sesame oil to the pan and swirl around. Add the pak choi to the pan and close the lid tightly. If your pan doesn’t have a lid, use a large pot lid to seal it. Shake the pan and allow it to cook for about 2 minutes. It generates its own steam. Add a splash of water, stir and cook for a bit longer if necessary, then set aside in a bowl. Repeat this with the mixed mushrooms and then toss this with the pak choi and the miso dressing.

Roasted Sweet Potato, Onion, Goats Cheese and Toasted Walnuts 🍠🧅🥗

INGREDIENTS

* 2 large sweet potatoes, chopped into ½ inch cubes 
* 60g raw walnuts (or pistachios)
* 1 red onion
* 60g cup of crumbled goat cheese
* 2 tbsp avocado oil (or olive oil)
* Salt and pepper to taste

For the Dressing:

* Juice from 1 lemon
* 30g cup of parsley leaves, chopped
* 1 clove of garlic, smashed
* 60ml olive oil
* 2 tbsp red wine vinegar
* Salt and pepper to taste

DIRECTIONS

* Preheat oven 200 degrees C.
* Roast sweet potatoes on a large sheet pan (with avocado oil, salt, and pepper) for 45 minutes or until golden brown, tossing once at the mid-way point
* While sweet potatoes roast, place walnuts in a small baking dish and roast in the oven at 200 degrees for about 8 minutes or until toasted and fragrant. Let cool.
* While sweet potatoes are cooking, make the dressing by whisking together all dressing ingredients in a small bowl. Set aside to let flavors meld. 
* When sweet potatoes are cooked, let cool slightly, then place in serving bowl
* Toss with red onions and parsley dressing (remove garlic piece).
* Top with goat cheese and toasted walnuts and serve

Garlic-Parmesan Roasted Carrots 🥕

Ingredients

* 1 kg medium carrots, peeled
* 3 cloves garlic, finely chopped
* 2 tbsp. extra-virgin olive oil
* 90g finely grated Parmesan, divided
* Salt
* Freshly ground black pepper
* 2 tbsp. fresh lemon juice
* 2 tbsp. chopped fresh parsley

Directions

* Preheat oven to 200°C. Cut carrots crosswise on a bias into 2" to 3" pieces. Cut thicker pieces in half lengthwise.

* On a large baking sheet, toss carrots with garlic, oil, 1/2 Parmesan, 1/2 teaspoon salt, and a few grinds of pepper. Spread in a single layer.

* Bake carrots until tender and caramelized in spots, 25 to 30 minutes. 

* Transfer carrots to a platter. Toss with lemon juice. Sprinkle with parsley and remaining 1/2 Parmesan and toss just to combine.

Butternut Squash Jam with Sliced Almonds 🍁🍂

INGREDIENTS

* 1 kg butternut squash, peeled and seeded
* Juice of 1 lemon
* 300ml water
* 1 vanilla bean, split open
* 300g sugar
* 40g sliced almonds

INSTRUCTIONS
 
* Cut the squash into slices, peel it and dice it. You will need 1 kilo of squash pulp. Put it in a pot and cook it over low heat with lemon juice and water for about 35 minutes, until it softens. Stir often to prevent it from sticking on the bottom of the pot. Depending on the texture of the squash you might need more or less water, more or less cooking time.

* Reduce the squash to a velvety puree with an immersion blender.

* Add the sugar and the split open vanilla bean and simmer the jam for about 10 minutes to thicken it.

* When the jam is almost ready, add the sliced almonds and cook for 5 more minutes.

* Spoon the jam into sterilized jars, close them tightly and boil the jars for 30 minutes to preserve the jam for months. Keep in a dark, dry place.

Baked Stuffed Tomatoes 🍅

Ingredients

- 4 tomatoes
- 50g Parmesan cheese shredded
- 30g Italian seasoned bread crumbs
- 30g onion, minced
- 2 cloves garlic, minced
- 2 tbsp olive oil plus more for drizzling
- 2 tsp fresh basil leaves chopped
- 2 tsp parsley
- 1 tsp oregano
- ¼ tsp freshly ground pepper
- 2 tbsp mozzarella cheese grated

Instructions

* Place an oven rack in the upper third of the oven and preheat to 200ºC. Spray an 8 X 8-inch baking dish with cooking spray.

* In a medium bowl, combine Parmesan cheese, bread crumbs, onion, garlic, 2 tablespoons olive oil, basil, parsley, oregano, salt, and pepper. 

* Cut the tops off and hollow out the tomato by removing the pulp and seeds with a spoon. (I have a grapefruit spoon with a jagged edge that worked perfectly for this.)

* Dice the pulp and add it to the bread crumb mixture.

* Gently mix the ingredients until they are well combined. Fill each tomato with stuffing and place in prepared baking dish. Drizzle each tomato with olive oil.

* Sprinkle with mozzarella cheese. Place in oven and bake for 10-12 minutes.
