This week, Tuesday's Chow features our frying pan margherita pizzas. They are mostly made beforehand, though you can make things easier by buying the bases or tomato sauce separately – or by taking advantage of our great offer on frozen pizzas. 👏 👏 👏

If you do want to make it from scratch, start by making a tomato sauce. Add 2 tbsp olive oil and 3 sliced cloves of garlic to a pan on a medium heat and cook for a minute, stirring. Add a 400g tin of tomatoes and 2 tsp of oregano and bring to the boil. Reduce the heat, cover, and simmer for 45 minutes, then remove the lid and continue cooking until the sauce thickens slightly. Set aside to cool.

To make 4 pizza bases, add 1 tsp fast-action yeast and 1 tsp sugar to a jug with 400ml lukewarm water. Stand for 10 minutes, or till a frothy head has developed on top of the water. Add 600ml flour and 1 tsp salt to a bowl and make a well in the centre. Pour in the ye**ty water, mixing until the flour is incorporated. Knead for 5–10 minutes until smooth and stretchy, then transfer to an oiled bowl. Leave in a warm place until doubled in size (usually about 1 hour).

Place a heavy, ovenproof frying pan on a high heat and preheat the oven's grill to high. Knock back the dough and split it into 4 equal parts. Roll each one into a 20cm disc. Place the first into the hot frying pan and cook for 3-4 minutes, till golden brown on the underside. While it’s cooking, spread on some of the sauce and top with blobs of mozzarella. Transfer to the grill and cook until the cheese is browned and bubbling – around 4 minutes – then serve, while you prepare the rest. 🍕 😋 😎

This coconut-rich spinach & chickpea curry is today's Tuesday's Chow. It tastes great and is easy to make. 👏 👏

Start by adding a little oil to a large pan on a medium heat, then add 1 sliced onion. Cook, stirring, until soft – about 8 minutes should do it. Chop together 3 cloves of garlic and a 3cm-piece of ginger and add them to the pan with 1 tsp of chilli flakes. 🌶🌶

Cook, stirring, for 2 minutes, then add 1 tbsp curry powder, 1 tsp turmeric and 2 tsp brown sugar, and cook for 1 minute more. Tip in a tin of coconut milk 🥥 and a tin of chickpeas (water and all), stirring to mix. Bring to the boil, then reduce the heat, loosely cover the pan and simmer for 45 minutes.

Add a few handfuls of spinach and stir to mix through. Cook for 3 minutes, until the spinach has wilted, then remove from the heat, squeeze in juice of half a lime, add some chopped coriander and stir.

Serve while hot on a bed of boiled basmati rice, alongside naans, poppadoms, dips and chutneys if you like. 😋 😎
