I'm in my last week here at UHI Orkney and I'm cramming in as much teaching as possible - this time with some Pakora making classes for young ones from Inclusive Orkney who had varying levels of assisted support needs.

The highlight for me isn't so much the participation but seeing them try foods and spices they haven't tried before, different textures and eating vegetables!

Who knows, maybe we'll inspire some future chefs?!!?

Last week I had the absolute pleasure to head down to the to guest lecture about Innovation & New Product Development specifically relating to my business The Pakora Explorer.

Talking about The Pakora Explorer again made me realise just how much we achieved in a short space of time and although it isn’t operational anymore…never say never ! 😉

I was even thinking of redirecting some in person Pakora Making Classes …something to think about anyway 🤔

Pakora Explorer came out of retirement today to cater for a very special birthday. Sassy Pakora aka Leah Kerr did work experience with us when we first got started and today she celebrated her 16th birthday!

Not only that - but next week she’s off to Florida to represent Scotland in a dance / cheer competition!

Happy birthday Leah - very proud of you and wishing you all the best.

As we draw 2021 to a close it’s time to say goodbye to my Pakora Explorer adventure.

I am both happy and sad to say that the trailer has now been sold to the guys & gals of Luxford Burgers who I know will take good care of my baby (aka the trailer) and have the same love for street food as we do!

With everything the hospitality industry is experiencing this year I 100% know I made the right decision as I’m pretty sure I would have had a nervous breakdown this December dealing with the change of restrictions!

One thing I will say is I DO NOT regret the adventure that has been Pakora Explorer and if anyone is thinking of starting their own business they should absolutely DO IT! It’s the best decision I ever made!!!

Wishing all our customers and supporters a happy new year … watch this space 😉

Following the update I gave last week, thank you to everyone for the kind words and especially to those who reached out to me personally. It was quite overwhelming (in a good way ❤️). And I just needed some time to process it all 🙏🏽

So I headed off with Papa Pakora for some ☀️ and have got my head together.

From next week the website will be updated and we’ll begin selling off the last of our products such as our Spice Blends, Chai Tea, Pakora Making Kits & our Frozen Pakora at Home Range…and then the task of selling the Pakora Truck and equipment will begin 😔

**BUSINESS UPDATE ALERT**

Many of you have noticed the radio silence from us and have reached out to ask what’s happening …I read something recently from another small business which really rang true for me and I think explains what’s currently happening (or not!) with the business

Running a business is really hard.
What they don’t tell you is that it can cause severe anxiety, and drains you mentally to the point of depression in even the most laid back people.

People will talk about you, compare you to others, use you, they will view you as a service and not a person anymore. You have to worry about if you forget to email/message someone back, are they going to think it was on purpose? Did you disappoint them? Will they hold that against you? When in reality you just can’t get to everyone’s messages and emails.

Starting up and running a successful business puts incredible strain on personal lives and relationships, many of which fail because there just is no work life balance when starting a new business. You need to be the director, the worker, the admin, the marketing team, the accountant, the cleaner..... All whilst being a parent, a husband or a wife, family support, friend - Especially this past year…

So in a nutshell, I am stepping back from Pakora Explorer for the foreseeable future - the business itself is still able to be operated so if anyone has any aspirations to run a ready to go street food business then please feel free to reach out!

Tonight the crème de la crème of the hospitality industry will be gathering at Hilton Glasgow
for the Hospitality Industry Trust Scotland Dinner and it's extra special for Team Pakora.

I was awarded a Frank Mullen Scholarship back in March 2020. This scholarship would allow me the opportunity to gain some invaluable experience in working in a big function kitchen catering for more than 500 people and supported by Exec Chef Murphy and his Team. This was to be a real opportunity to showcase one of Scotland's best loved snacks in a truly authentic way.

Unfortunately, COVID had other ideas but we are delighted to say that tonight is the night and we couldn't be more excited (and nervous!)

To David Cochrane, the team and of course Calum Ross & Chef Murphy - thank you for making this dream a reality!

Special Fried Rice using Pakora Explorer Chawal Masala

I am terrible at cooking rice - it’s a bit of a joke in the family that as a Pakistani girl I can’t cook rice. However, my saving grace is microwave rice that I can easily ‘jazz’ up using this Chawal Masala.

Ingredients
- 1 pack of plain microwave rice
- 1 pack of our Chawal Masala (link in bio)
- ½ white or red onion (diced)
- 1 clove of garlic (diced)
- 1 inch ginger - (shredded)
- 2 tbsp of coconut (or vegetable) oil

**You can add just about anything to do this dish to make it special, below are my favourite ingredients:
- Chicken Thigh (diced)
-Tofu (cubed)
-Mixed red & yellow peppers (diced)
-Courgette (diced)

Method
- Have your microwave rice ready
- In a wok, heat your 1 tbsp oil
- Add your onions, garlic & ginger and allow to soften and brown slightly
- Add your vegetables and allow them to cook
- Once cooked, put them in a separate dish and set aside
- Using the same pan, add 1 tbsp of oil making sure it’s hot but not smoking
- Add half a packet of the Chawal Masala and stir quickly making sure the turmeric and curry leaves don’t burn. The heat from the oil will start to release the flavours of the whole spices
- Add your rice and stir well, ensuring the masala covers the rice. You will start to get a lovely natural yellow colour
- Add your previously fried vegetables and stir well

I like to serve mind with a squeeze of lime and fresh coriander or spring onions on top.
