We cooked some food at the for the 2nd people's assembly for the Forest food forum
A beautiful setting and some nice food shared amongst a lovely mix of folk to discuss the food system in the Forest of Dean.
Look them up and get along to the next meeting, it was a lovely day!
We completely forgot to put our menu and suppliers list up for people to see, I did and amazingly awkward speech naming a few but I wanted to give a shout out to all who contribute....

We are really excited to have been asked to make some food for the Forest Food Forum, this gathering will involve eating some delicious food and engaging in some conversation about food in the Forest of Dean and ideas for how that can be improved!
This particular assembly will be focusing on children and families and how can we improve access to healthy food in the Forest of Dean!
You'll get to have a tour of the epic wilderness centre which if you haven't been lucky enough to visit before is worth coming just for this- the views and building itself are stunning!
We are asking attendees to pay what they feel for the food on the day, but we do need to know numbers of people/ families attending so as to eliminate food waste so please copy the link below and sign up asap

Testing out using some amazing locally grown and milled flour courtesy of
Using a mix of organic shipton milk and Grist wholegrain, the flavour is off the charts good exactly what I was hoping and imagining.
Simple overnight bulk proove, 70% hydration, 33/67% wholegrain/white flour.
We are going to be using a similar recipe for the upcoming Forest-food-forum peoples assembly where we will be making some food and having some good talks around the current food system in the Forest of Dean, link for tickets coming soon watch this space!

We are looking after our mates pop up at the lovely this week and next
We are cooking some delicious Herefordshire beef brisket rubbed with coffee and cinnamon before being slow braised.
We have delicata squash courtesy of which will be spiced and roasted before being finished on the charcoal.

We baste the lamb with a super strong emulsion made with garlic, bay, pepper & fennel while resting up - this makes me really happy as it's delicious!

Had an awesome weekend serving the lovely folk at cider festival, we absolutely love being involved with this such a great vibe all weekend!
We made different food everyday- not planned that way but our hand was forced by our old "trusty" mixer taking an impromptu holiday!
We made
•Herefordshire beef brisket with coffee and cinnamon
•Wood roast amoro squash with salsa verde •Hummus & smoked pepper & aubergine with fresh flatbreads
•Peanut mafé stew with squash & peppers
•Pork collar & apricot tagine
