Honey Lime Shrimp Avocado Rice Stack

Ingredients

For the Shrimp

1 lb (450 g) large shrimp, peeled and deveined

1 tbsp olive oil

2 tbsp honey

2 tbsp fresh lime juice

2 cloves garlic, minced

1 tsp paprika

Salt and black pepper, to taste

For the Stack

2 cups cooked jasmine or basmati rice, cooled

2 ripe avocados, diced

1 cup cherry tomatoes, diced

¼ cup red onion, finely diced

2 tbsp chopped fresh cilantro

1 tbsp lime juice

Salt and black pepper, to taste

For Garnish

Lime wedges

Extra cilantro

Sesame seeds (optional)

Instructions

1. In a bowl, toss the shrimp with olive oil, honey, lime juice, garlic, paprika, salt, and pepper. Let marinate for 10–15 minutes.

2. Cook the shrimp in a skillet over medium-high heat for 2–3 minutes per side, until pink and fully cooked.

3. In a separate bowl, combine the avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper.

4. Using a food ring or measuring cup, layer the rice first, followed by the avocado mixture, then the shrimp. Press gently before removing the mold.

5. Garnish with extra cilantro, sesame seeds if desired, and serve with lime wedges.
