This is a lovely soup.
Sopa de huevo, Mexican egg drop soup. 🇲🇽🍲
Not just the Chinese make a great egg soup. This Mexican version is just as comforting, with a little chili kick.
THE METHOD:
1. Bring chicken broth to a slow boil
2. Whisk eggs with flour
3. Add to broth, simmer 10 minutes
4. Stir occasionally so eggs don't clump
5. Top with parsley and chili powder
20 minutes. 4 servings. 5 ingredients.
ADD MORE:
🥕 Carrots, broccoli, peas, bell peppers
🍗 Shredded leftover chicken
