We founded The Scottish Bee Company back in 2017 after long discussions about what we could do to help the environment. We always wanted to run a business that was socially and environmentally responsible and the more we read about the decline in bee numbers, the more we felt we needed to do something. We started off by giving bees to beefarmers across Scotland in order to help them as there was n

o funding available to beefarmers. We increased bee numbers by 23 million but quickly learned that there many more types of pollinators that needed our help. This led us to starting our sister charity, Repollinate.org.uk. 10p from every unit sold goes to this charity that aims to increase pollination through education programmes and wildflower projects. Since then we have achieved multiple awards for our honey and are currently working hard to tackle the problem of honey fraud around the world. We will always be a business with the environment and people in mind. We pay a living wage and have flexible working hours. We only use recycled or recyclable packaging. We source ethical honey, beeswax and scents and we always strive to learn more and be our best in all of these areas. We are progressing to be much more of a Scottish Larder focusing on slow food and regenerative farming. The ingredients we use at The Scottish Bee Company are deeply connected to the soil, climate and environment that create them. What actually is Heather Honey? 🍯

We recently headed out to visit some of our hives on the Scottish heather moors, with only a couple of weeks of this year’s heather season left.

For just a few short weeks each year, the moors turn purple as the heather comes into bloom. It’s during this time that our bees forage on the heather, collecting the nectar that will become our Scottish Heather Honey.

This is what gives Heather Honey its naturally thick texture and rich, deeply aromatic flavour, with distinctive caramel-like notes.

It’s a short and precious season, and one that depends heavily on the Scottish weather, so every good foraging day counts. 🐝

For just six weeks each year, Scotland’s moors are transformed as the heather comes into bloom.

It’s a short and remarkable season, giving our bees a precious window to gather nectar from the sweeping purple landscape.

What happens inside a hive when it rains? ☔️☔️

After all the sunshine we’ve enjoyed recently, some much-needed rain has arrived in Scotland.

While our landscapes will welcome it, you might wonder what it means for the bees.

When heavier rain falls, foraging slows and more of the colony remains within the shelter of the hive. But inside, life carries on.

Bees tend to the brood, care for the queen, manage their precious stores and work together to keep the colony warm and thriving.

Then, as the rain passes and the skies clear, the foragers take flight once more, returning to the flowers in search of nectar and pollen.

Come rain or shine, the remarkable rhythm of the hive continues. 🐝

August is a busy month for our bees 🐝🌸

They’re making the most of the late-summer blooms, gathering nectar and pollen while there’s still plenty on offer.

And with the heather now in bloom, it’s one of our favourite times of the year here in Scotland 💜

The recent hot weather has been tough on our bees too. 🐝☀️

One of the easiest ways to help is by leaving out a shallow dish of fresh water with a few pebbles or stones for them to land on safely.

Apricot, Ricotta & Hot Honey Toast ✨🍯🫶

A delightful balance of sweet, savoury and spicy flavours, delicious enjoyed however you like.

Serves 2

Total Time: 15 minutes

Ingredients:
The Scottish Bee Company Scotch Bonnet Hot Honey
3 Apricots
Ricotta
Good Bread
Good Oil
Fresh Basil
Great quality salt

Method:
Halve the apricots and remove the stones. Rub with a little oil.
Slice the bread, drizzle with oil and toast in a pan over a medium/high heat. Remove when nicely golden.
Place the apricots cut side down in the pan. Cook until nicely coloured on both sides.
Spread a generous amount of ricotta over the toasted bread before drizzling with oil. Top with the apricots, fresh basil, a generous drizzle of hot honey and a good pinch of delicious salt. 🧂 🫶
