They also have exclusive access to my personal recipe library of over 250 delicious, simple and real recipes. My aim is to create healthy, tasty and simple meals that anyone can cook! As a working mum of two, I totally understand the pressures of the daily ‘what is for dinner?’ panic: the panic that leads many of us to reach for that ‘oh-so-easy’ ready meal! All of my recipes are tried and tasted

in my kitchen - they are meals that my family and friends love; meals that don’t take hours to prepare and meals that are bursting with flavour! So, why not make 2021 the year that you pledge to cook from scratch in a bid to be healthier, happier, a little richer (meal planning and cooking from scratch has definitely reduced our food bills) and a little more eco-friendly (you will find that your food waste and the amount o packaging you end up with will significantly reduce). Here’s to never running out of cake 🧁

For this recipe, I added 1 mashed banana, 2 diced apples and dark chocolate chips to the basic mixture 👇🏻

🍰 Makes two 8 inch cakes; twelve cakes or two small loaf cakes 🍰

🥚 4 eggs (broken weight about 200 - 210g )
🥄 Same weight in Self raising Flour
🍬 Same weight in Caster Sugar
🧈 Same weight in Butter
🥄 2 level Teaspoons of baking powder
💧 3 Tablespoons of hand hot water (6 dessert spoons)

The secret is to have the same weight in butter and sugar as the eggs.

1. Set oven to 170C - shelf in middle
2. Break 4 eggs into a bowl and weigh (about 200 -
210 g)
3. Add same weight of butter, caster sugar and flour to eggs (keep flour on top)
4. Add 2 teaspoons of baking powder on top of flour
5. Cover baking powder with 3 tablespoons of HAND
HOT water (not cold or luke warm) and let it fizz for a couple of seconds
6. Use a mixer to mix everything together. Mix for a few minutes until very smooth and creamy
7. Divide between two 8” tins and bake in centre of oven at 170C until golden brown (about 20-25 minutes)
8. Check after 20 minutes with sharp knife which should come out clean

As the children become adults, August becomes more precious and special to me.

Time as a family, as a couple and time just for me!

A fabulous holiday, days out, catching up with friends and lots of dog walks … this is my perfect August.

And now it’s the last day of the school holidays; tomorrow I start a new year in Year 6! And, in a couple of weeks, the oldest teen is heading back to Birmingham for Year 2 and the younger one (who is currently recovering from Reading Festival) is off to a new sixth form on Wednesday.

So, although I’ll miss the summer and our time together, I cannot waits to see what the new year brings for us all 🫶🏻

If you do one thing before the start of term, make it this …

Batch cook some of your favourite dinners for the freezer (and a couple extra if you have a teen who’s off to uni!)

Perhaps I should do a batch cook series sharing my favourite freezer meals 🤔

Cook a batch of airfryer eggs and pop them in the fridge for quick breakfasts and healthy, protein packed snacks.

130 degrees - 9 minutes for soft, 11 minutes for jemmy and 13 minutes for hard boiled 🥚

And the best part, you can keep them in the fridge for up to 7 days.

AD/PR: 💪🏻 Two slices = 15g protein. When your sandwich starts pulling its weight 👀🥪

I’m definitely at the stage of life when I need my food to work a little harder for me.

So I gave Mighty White Protein Bread a try.

It’s soft, it tastes like proper white bread, and 2 slices give you 15g of protein. 🙌🏻

Basically, the easiest kind of upgrade - just swap out your usual bread and carry on with your day.

No food rules. No complicated recipes. Just a really good sandwich that works a little harder. 🤍

As far as dates go, I’d give this one 10 out of 10 🫶🏻

My husband and I started our date day (and yes, you can still go on a date after 27 years together) at the amazing .

The pub is just stunning inside and outside; the service impeccable and the food and drink were perfect.

And to add to the experience, you can wander around beautiful Highgate, explore the cemetery (which is well worth a visit) and take a romantic walk through Hampstead Heath.

If you are love a good pub, you need to plan a visit to .
