Still thoroughly enjoying discovering new veg to cook for tea! These are the fresh edamame beans we’re selling, supplied by the lovely Riverford!

Here’s how to cook’em….

Simmer the beans in their pods for 4-5 mins. I did them for 4mins, once the cold water I put them in came to the boil.
Plunge into cold water.
Once drained, they just pop out of their pods with a little squeeze! Really easy!
Delicious freshly cooked edamame beans - I’m adding mine to a veg stir fry for tea! ❤️

A hand cut tomatillo salsa verde - more like a salad, than a dip. Delicious!

Finely chopped tomatillos, jalepeno pepper, white onion & coriander dressed simply with salt & lime juice.

I’m serving it with a baked potato, hoummous, cottage cheese & slow roasted tomatoes 😋
