Our cattle are rare breed Belted Galloway, or ‘belties’ which is a traditional premium British breed known for its exceptional flavour. Due to its double coat of hair providing winter warmth rather than the layer of backfat many other breeds requi
re, the belties naturally carry a more even distribution of fat throughout the muscle producing an extraordinarily marbled meat, which is actually lower in saturated fat and total fat coverage than many other breeds. This marbling provides the fantastic flavour, texture, succulence and tenderness. The meat will be hung for a minimum of 21 days and up to 28 days depending on the recommendations of our master butchers for each specific animal. All meat will be vacuum packed for freshness and ease of use or freezing. Wharmley Lambs
Our lambs are all home bred Texel lambs which are a premium breed known for their carcass quality with an unsurpassed meat to fat ratio. This provides a leaner meat whilst maintaining the exceptional flavours expected of Northumberland lamb. They thrive on grass which allows natural fattening of the animals. All lamb is produced, slaughtered and butchered locally! Lamb will be hung for 4-8 days, again relying on the expertise of our master butchers to achieve the highest standards. All meat will be packed for freshness and ease of use or freezing. Simpsons Butchers
Established for over 100 years, and run by Joe Simpson, the third generation to ‘butcher’ and farm at ‘The Croft’ in Cockfield. Simpsons provide a unique bespoke service as one of a small number of butchers where all slaughtering, hanging, butchering and packaging is done on site. The professional team work to the very highest standards, with animal welfare their top priority. All animals are treated with kindness and respect.
