How curious are you feeling? Nimbo is one of the more unusual beers in the Crossover range, but not because it is trying to be loud.

It starts with a blend of 1, 2 and 3 year old golden ales, brewed with malted barley and raw wheat, then spontaneously fermented and aged in neutral French oak barrels. From there, it was finished in freshly emptied tequila barrels.

The result is bright, dry and layered, with lime zest, earthy agave, gentle malt sweetness and a warm finish from the barrel. Not a novelty beer. Not a tequila gimmick. A beer shaped by oak, time, fermentation and balance.

Fruit has to earn its place. When we use raspberries, blackberries, grapes or other seasonal ingredients, they are not there just to add sweetness or make the beer more obvious. They become part of the beer’s structure.

Fruit can bring acidity, aroma, texture, colour and a sense of the season it came from. Some fruit gives brightness. Some brings depth. Some changes completely once it meets oak, time and fermentation.

That is the bit we are interested in. Not fruit beer as a shortcut. Fruit as part of the blend.

Oak, acidity, age, fermentation and fruit, all working together to create something balanced, layered and worth spending time with.

How curious are you?

Bramble, Thorn & Briar is one of the best places to start with Crossover. It begins somewhere familiar, with raspberries, blackberries and bright fruit, but then the oak, time and wild fermentation start to show.

It is fruit led, but not sweet. You get sharpness, soft rose, gentle wild character and a dry finish that pulls everything back into balance.

Approachable, but not ordinary. A beer for warm evenings, slower drinking and people who like a little more character in the glass.

Looks like it’s going to be a scorcher at Lannock this weekend.

The kind of weather made for food outside, something cold in the glass and a bit of time in the yard.

Smoke and Barrel have a full weekend lined up, starting with High on the Hog on Friday evening, then the open fire kitchen and taproom on Saturday, followed by Side Pocket on Sunday.

There will be proper food, drinks, music, farm air and plenty happening across the weekend.

Crossover beers will be pouring too, so if you are coming over for food, make a little room for something curious in the glass.

Come hungry. Stay for a beer.

After all the waiting, tasting, blending and time in oak, the beer still has a simple job.

It is there to be opened, poured and enjoyed.

Some of our beers are bright and fruit led. Some are more complex. Some take a little time in the glass. None of them are made to be difficult.
