Well mamas, it’s been a hot minute since I’ve been on the grid…Somehow it’s February already and with spring feels truly within reach 🌱

I started a new job at the end of last month and have spent the past few weeks navigating my way through that alongside the general juggle of motherhood! In all honesty it’s been an absolute joy to delve into something new but with that I’ve neglected to share some delicious recipes 🥲

Beating those Blue Monday blues with the easiest dish around - pesto pasta!

My love for orzo just keeps growing, it’s such a great pasta. Made this with half a jar of peppers slices, a handful of ripe plum tomatoes halved and a few good spoonfuls of quality green pesto (shop bought is so much easier than making your own, when you’re short of time and energy)

Voilà, an easy peasy tasty dinner (or lunch, or snack 🙈)

Family style 🍴

I’d never really heard of the term ‘family style’ until I travelled to Denmark a lot of years back. For those who don’t know, family style dining is when everything is brought to the table on large platters or serving dishes, and arrives when it’s ready. I knew what it was, I’d just never heard that term before 🙈

When we all gather for dinner, it’s always family style!!

We spent this weekend in Donegal with family and seen as cooking for a crowd is my happy place, I always volunteer to cook dinner. This was a hearty warming curry, to heat us up after having the cobwebs blown from us all day!

I’ve a few tweaks to try before I can share the recipe, but it’s definitely a tasty one!

Easy tomato soup 🍅

This one is ultra simple and perfect for those cold grey days we’ve been having. Recipe below 👇🏼

10-12 avg. sized tomatoes
4 garlic cloves
1ltr of stock (I used chicken but veg would work too!)
Handful of fresh basil
1tsp dried oregano
Half slice of bread / leftover bread for croutons

Preheat oven to 180c
Cut tomatoes in half and place on a lined baking tray
Add garlic cloves, still in skin
Drizzle with good quality olive oil and dried oregano
Roast in oven for 30mins
Once roasted, place into blender along with stock and fresh basil
Blend until smooth
Pour into pan and simmer until warmed through
While simmering, cut bread into small chunks and fry in a little oil, once crispy remove from heat and put to one side
Serve soup with croutons, a drizzle of olive oil and some fresh basil!

I stole a few moments, in an otherwise busy morning, to enjoy an early lunch. When you’ve been awake since 5:30am with an active toddler, there’s a need for early lunch, late lunch and whatever else in between to keep you going 🤣

Sourdough toasted with pesto, prosciutto and basil. Easy, quick, delicious! ❣️

Motherhood is…acceptance.
Acceptance that some days won’t go to plan.
Acceptance that sometimes the long to-do list won’t get looked at.
Acceptance that there are days you’ll sit on the floor for hours watching reruns of Paddington Bear nursing a poorly little baba that just needs your attention. ❤️

Today, the plans went out the window but somewhere mid morning I realised how much more important it was to be present, give this little one the time she needed and forget about the to do list for another day!
