Every drop of our Cabrach New Make Spirit has a remarkable journey to make.

From our long fermentation of 168 hours, slow distillation process, meticulously established cut points, and our carefully curated oak casks, every step of our process is crucial to creating what will become The Cabrach's signature Single Malt Scotch Whisky.

Our spirit is early in it's journey; however the red fruits, gentle heather smoke, and oily texture of our New Make speaks to the care and intent in our whisky making and the creation of a spirit worthy of The Cabrach name.

The Cabrach will be there 🥃

Come over & say hello.

A little reminder for the weekend!

We will have card machines available (as will many of our traders) but as we’re in a rural location there are no cash machines nearby and mobile/internet signal can sometimes be a challenge.

We’d therefore recommend making sure you have some cash with you for the day just in case! 💷

And if you’re joining us for the Ceilidh in the evening, please make sure you have cash with you as well.

We can’t wait to welcome you to Lonach this weekend! 🥃

Some journeys are measured in miles. The Cabrach Distillery's is measured in milestones. From the first stone laid at Inverharroch Farm to architectural recognition celebrating the craftsmanship and vision behind The Cabrach Distillery, the past four years have been extraordinary.

Today, The Cabrach Distillery stands as an award-winning symbol of what shared belief, community spirit, and perseverance can achieve. From restoring our old steadings which date back to 1849, to reviving the traditions of whisky-making in The Cabrach after more than 170 years of silence, every milestone reached has been about restoring confidence in an extraordinary place and creating a future rooted in purpose.

Here's to four years of progress, and to the journey still unfolding.
Thank you to everyone who has been part of our journey.

The Cabrach Distillery's worm tub condensers – of which we have three – represent a vital part of our production architecture and an important nod to our whisky making heritage, honouring centuries-old traditions.

As the spirit vapour passes through our copper worms, gently cooling to produce our New Make Spirit, a weightier, richer, more complex character develops. Paired with our long, slow distillations, our approach to whisky making in The Cabrach is a homage to the renowned distilling heritage of this place and the generations of distillers who came before us.

"Honeyed, glossy texture” – “Oily richness” – “Subtle touch of umami”

Just some of the wonderful, colourful notes those who have tried our New Make Spirit have attributed to the influence of our worm tub condensers. Indeed, it is that harmony between our slow distillation rates and cool running worms which creates additional complexity in our wild spirit.

For those of you eager to try our spirit, samples will be available at the Games, or to hear more about our production, join us for a tour at Inverharroch.

We're delighted to be heading to the Highland Games on 22nd August – one of the Highlands' most treasured celebrations of heritage, tradition and community!

Founded in 1823, the Lonach Highland and Friendly Society has brought together generations of the Strathdon community, preserving traditions that continue to inspire today. From the unforgettable march of the Lonach Highlanders carrying their Lochaber axes and pikes to the stirring sound of the pipe bands, it's a day that celebrates the enduring spirit of the Highlands.

It's a fitting place to share the story of , where we're working to revive another historic Highland community through the return of whisky making after 170 years of silence.

If you're planning to be there, come and say hello to our Distillery team. We'd love to tell you more about our , our one-of-a-kind social enterprise, and how every bottle and every cask helps support the regeneration of one of the Highlands' most fragile rural communities.

Inspired by the red fruits, orchard, and buttered pastry notes in our new make, the team sought out a vibrant Calvados cask, curious to see how it's influence affects our spirit over the coming years of maturation.

Filled on the 26th of June, a curious John and Euan took a sample at 1 month before storing the cask away. Even at one month, distinct new flavours of Syrupy Apple Turnover, Cloudy Apple Juice, and Marzipan, were detected.

This Calvados cask compliments our other unique casks, including High-ester Caribbean Rum, Amarone Wine, Scottish and American New Oak, and Palo Cortado Sherry.
