GOOD NEWS. BAD NEWS. 🔥🐸

The good news?

Scorpion & the Frog is back on the shelf.

Moruga Scorpion. Our Cajun-inspired seasoning. Honey, herbs and a whole lot of flavour wrapped around a properly serious heat.

The bad news?

This is a very limited batch.

When they’re gone, they’re gone — at least until we can persuade another batch of Scorpions to behave themselves. 🌶️

RAIN HAS NOT STOPPED PLAY 🌧️🔥

The Harbour Arm Big Summer Blowout is still very much ON — and Beaver Creek is open for business.

Hot sauce, BBQ rubs, seasonings and a dry-ish place to shelter while you decide how much chilli is sensible. 😁

We’ll be here at the hut today — come down, say hello and make the most of the Great British summer. 🇬🇧🌧️

A little South African influence on the kettle 🇿🇦🔥

Chicken thighs cooked over Camelthorn — no glaze, no sauce. That deep mahogany colour is all smoke, heat and rendered chicken fat.

And frankly, we’re impressed.

Camelthorn burns seriously hot, gives beautiful colour and brings a cracking wood-smoke character without bullying the food.

Big thanks to SAFFA Snacks for introducing us to this rather lovely bit of South African firewood. 🇿🇦

This one’s definitely staying in the Beaver Creek wood pile.

Next experiment: cutting some into smoking chunks and letting it loose on a rack of ribs in the Masterbuilt.

🔥 BACK ON THE SHELF — RAGIN’ CAJUN 🔥

Our Cajun seasoning’s hotter little brother is back.

Smoky paprika, herbs and proper bayou heat — great on chicken, pork, wedges, dirty rice, seafood… or anything that needs waking up a bit.

🔥 SCORPION & THE FROG — SOLD OUT. 🔥

Well… that didn’t hang around long. 🦂🐸

The first batch of Scorpion & The Frog has officially disappeared from the shelf.

The good news? We’ve got enough Moruga Scorpion tucked away for one more small batch.

So it will be back soon at Folkestone Harbour Arm — but there won’t be much of it.

Something a little different on tonight’s menu.

Grabbed some South African camelthorn from our friends SAFFA Snacks and I’m looking forward to seeing what it brings to the grill. Just a few homemade burgers with Beaver Creek Cabin Rub—sometimes simple is best.

I’ll let you know how it turns out. 🔥

There’s something special about beef short ribs.

Start with a great piece of meat, these dinos came from Hythe Butchers give it a generous coating of Beaver Creek Cabin Rub (or your favourite beef rub), then let the smoker do the hard work.

We cooked these low and slow at 240°F over beech wood, although hickory, oak or cherry all work beautifully.

Around four hours in, the bark starts to set and the meat begins to pull back from the bone. That’s the point where patience really matters.

Eight to twelve hours later… a beautiful dark bark, tender enough to fall away from the bone but still holding together.

No tricks. No shortcuts. Just good beef, good smoke and a balanced rub.

A fresh batch of Over the Top is making its way to the shelves this week.

We’ve made a few refinements since the last batch, and we’re really pleased with where it’s landed.

Scorpion & the Frog has finally landed.

Slightly later than planned, but we’d rather be late than rush it.

A big thank you to everyone who tasted the R&D batch and shared their thoughts. We’ve listened, made a few small tweaks, and we think it’s better for it.

Same Cajun herbs and spices. And a little more sting 🦂

Over The Top chilli served two ways… 🌶️

Old-school nachos with guacamole, sour cream and our Mesa Roja Taco Sauce.

Or my personal favourite… over rice with a soft fried egg. 🍳
