Today, my morning was dedicated to a task that involved handling the exquisite Kagoshima A5 Wagyu Sirloin. Although the process of meticulously trimming off the excess fat was laborious and challenging, I couldn’t help but appreciate the exceptional quality of these cuts. The attention to detail and precision required to handle this premium beef is nerve-wracking, as a single misstep could result in significant financial loss. Nonetheless, I am confident that the cuts produced today are unparalleled in the UK, boasting both superior quality, taste and minimal waste. Working with this special beef truly feels like it in a league of its own, and although the costings for today’s work are not yet finalised, I know that with each attempt, the task will become easier and more rewarding. #kagoshima #kagoshimawagyu #wagyu #japanesewagyu #wagyubeef #japanesewagyu #wagyulovers #marbledbeef #beefmarbling #amazingmeat

**UPDATE- What's going on** Been a bit of a busy spell since the rest of the UK went on holiday. The barbecue trade has been spectacular and interestingly actually quite different this year in one way or another. Since Springtime we've seen an incline in the demands for slow cooking cuts which just keeps growing. This may well be a result of people looking to create tasty dishes from more affordable cuts. Whether it be for a traditional Irish Stew, Chilli Con Carne, a fresh tomato based Mediterranean Osso Bucco casserole or an amazing spicy Curry, these dishes are all on the way up in popularity. We've seen more open fire cooking with Dutch Oven / Cast Iron cooking than ever before which is an exciting change. More on this to coming soon.. Anyway, the New Website is hours away from launch "apparently", If you hit any issues just shout, we'll be all over it in the coming days ready to tweak and continue developments.
