As the weather changes to rain , fish was on the menu as it was fish Wednesday but Julian had taken two lamb shanks out of the freezer the day before .
So the lamb shanks needed to be used .
Sri Lankan lamb shank curry from the Hoppers cook book was in hand , with whole grain rice and paratha. Sadly I forgot to take a pic of the lamb shanks in the sauce …topped with fried ginger matchsticks and curry leaves went down great on a Wednesday evening.
Now for some tv documentaries and red wine While Mr jumble snores over the volume.
Wine : chicken rosé now a red of the same wine producer.. £7.25 Tesco

When you just want something simple !
Jumble would rather have a homegrown yellow courgette though, lol🐶
After a little rain the sun came out again casting sunshine over the fields at the front and back of the cottage with a nice sunset ..

Tonight we opted for a homemade risotto using left over chicken from Sunday’s roast and a couple of homegrown courgettes , it was very nice with a bit of a crunch..
We invited through next doors grandson and partner for a glass of wine while dinner was cooking .
They were up with their children for a holiday to see their gran my neighbour Shelia in her 90’s , they always come up every year and after a week they head home tomorrow . We always chat and say hi and truth to be told and don’t laugh we couldn’t remember their names ..so I asked them tonight for a reminder…lol
See you next year Kelly , Nathan , Jamie and Hannah.xx safe journey home to Yeovil.

Well that’s the weekend mostly over and what a weekend it has been , met Carol from Perth -Australia and her family again after 3.5 years, met the next door neighbours family from down south on the right and we didn’t get the time to have drinks with- next time , my neighbour down on my left is moving away … but we will still see her as she won’t be that far away .
While it rained during the night and the smell of smoke still lingers in the air from the Cairngorms somewhat 50-60miles away I seen on Facebook it’s under control now I think …
Today was another 2nd birthday celebration (also jumbles )but for my great neice Millie , with a small gathering of family members to celebrate her day ..
Then home to a roast chicken winner dinner and all the trimmings cooked by Julian and the scent of some homegrown sweet peas lingering in the background…
Wine was a -Yealands £8 Morrisons.
Cheers to a great weekend , I hope like me you all have enjoyed yours .x

Tonight we fancied a curry ..
While we stayed at Caroline’s house in Orkney , I found a book in her bookshelf called “ Miss Masala - real Indian cooking for busy living “ by Mallika Busa…a book of recipes and funny life stories that got me interested in purchasing it for myself plus another 2 of her books …
Tonight we had
Dal Palak-lentils cooked with spinach and aromatic garlic a great vegetarian meal on its own too but we had it with
Kerala chicken curry-Aromatic chicken with curry leaves and coconut.
Both recipes were delicious. We served this with pilau rice and Paratha..
One insert of her life story in the book was : “As the weekend approaches” P 72 .
This made myself choke on the wine with laughter that came from my nose , lol not her nose but from my own as I read the book while I drank some wine -looking at the recipes from the book
Wine was Mad fish ( Western Australia) which I was gifted last night from Carol .
Jumble is still knackered from playing with Roxie of chase me last night ..

What a treat to be asked out for dinner ..and to be cooked for .. a rarity for us .. even before and now with jumble who...

What a treat to be asked out for dinner ..and to be cooked for .. a rarity for us .. even before and now with jumble who is in our life now, who has never been left alone at home.
Thank you to Linda Adam , her husband Gavin and her family and her sister Jenny to share their meal with us - which was delicious and with all the yapping I missed out on taking pics.
Also meeting up again with their other sister Carol McDavitt from Perth-Australia whom I met 3.5 years ago through my page who asked if I would host a dinner evening for her and her sisters as a surprise - whom we still keep in contact through my page . A friend through food and life now. ( and wine!)
Jumble was welcome too and Roxie their 9 year old pooch kept jumble on his paws - he’s knackered now , lol zzzzz

Recipe below:
New York baked cheesecake

Non stick tin with removable bottom about 23cm

This is in two parts

The base
90g of plain flour sieved
90g of butter - melted
50g of caster sugar
50g of ground almonds
1 teaspoon of almond extract

Filling
Soft cheese about 840g.
280g of caster sugar
50g of sifted plain flour
2 eggs plus 1 egg yolk
400ml of whipping cream
1 tablespoon of vanilla extract

A grate of Nutmeg

Preheat oven to 160c for the base
Melt the butter
Sift the flour into a bowl and stir in the
Almonds and sugar
Put the almond extract into the butter then into the dry ingredients and mix
Using the back of a spoon or fingers spread the almond paste over the base of tin lined first with parchment paper.
Place into oven for 25mins until lightly golden and leave to cool before filling goes in

Turn oven up to 180c fan (200° )

For the main filling
By machine or hand
Mix the cream cheese with sugar in a large bowl until combined
Now add the eggs , cream , vanilla and stir through
Now sift the flour on top and fold in
Pour into your tin and grate some nutmeg over then bake for 1 hour
It should be puffed up with a slight wobble and run a knife around sides as well then leave to cool
Don’t worry if it starts to split - running the knife round first will help as it will sink if you don’t it will just sink in the middle and the sides still up - while this cools ( they all do it - and it tastes the same anyway)
It may still have a slight wobble as like in video .
Then put in fridge for a few hours or overnight
I topped mine with raspberries and white chocolate chips and icing sugar.
You can use any berry , mango or a crumbled chocolate flake .
Slice and serve with some pouring cream over it

Steak night in the sun tonight , just a basic steak with baked potato, coleslaw , corn on the cob and an anchovy, tomato , red onion and caper salad … delish ..
Earlier today I seen a stick thing on the tiles while washing my shops step but on contact it flew onto my shirt then I realised it was a insect, so I managed to get it out on the open rather back into the shop where no doubt it would of died , I googled it and found it was a moth . I hope it survive’s - a wee beauty to that …

Guess who’s birthday it is today .Happy 2nd birthday Jumble. (or in dog years jumble turns into a teenager 14 ..lol)🐶🎂❤️...
