Meet Our Trainers! Continuing our series on the certified Barista Trainers looking after coffee shops up and down the country. 🎓☕ Next up…. it's Gillian!

Gillian's been working with coffee since she was just 16, specialising in speciality coffee since 2014 - from owning and running cafés in Glasgow to managing Coffee Festivals and her own mobile coffee business. 🚐☕

Her coffee journey even shaped her wedding: when she couldn't find a coffee bar to match the vibe she wanted, she built one herself!

As a teenager, watching Friends, Mandala's to-be owner was always more drawn to Central Perk coffee shop than to any of the six lead characters. Central Perk wasn't just a set, it was where the first dates happened, the break-ups, the birthdays, the drama! That idea stuck: one day, to run a café just like that.

Four years ago, that dream became - a café, eatery, events space and community hub tucked into Meersbrook, Sheffield. Two years in, it doubled in size to make room for open mic nights, poetry evenings and weekend parties.

Today it's a LGBTQIA+-friendly space serving bangin' breakfasts, bougie brunches and lush lunches, with evening meals on the way! It's picked up TWO Best Café nominations at the Exposed Awards, and currently sits #3 out of 120+ cafés in Sheffield on TripAdvisor.

As the owner puts it: "Mandala isn't just a café, it's a vibe."

Somewhere between North Shields and Tynemouth, a pink-and-white pod has become the reason morning walks get a five-minute detour.

Jake Rusby discovered café bombón (a sweetened Spanish coffee drink) on a cycling trip to Majorca. Unable to find the drink back home, he launched to serve it himself.

Why "Afuera"? It means "outside" in Spanish, and that's the whole idea: Spanish lattés, matcha, speciality teas, and yes, that café bombón, all served from a pod in a beautiful outdoor setting.

Jake's kept it local wherever he can. The beans from North Shields, matcha from Whitley Bay, and pastries from nearby too.

Jake's first winter with Afuera (2025-2026) was a true baptism of fire. The early starts. The cold. But Afuera become a fixture to keep the locals (plus more than a few homesick Spaniards) coming back for more.

Meet The Coffee Barn! 🤩 Their founder learned the craft in one of the best environments possible - Australia's world-class and pioneering coffee scene. Coffee Down Under is precise, quality-obsessed, and ahead of the curve!

That experience, combined with a traditional approach to customer care, shaped Wi******er Coffee Roasters and more recently the beautiful Coffee Barn. A coffee shop fuelled by it's own roastery really is in charge of every single variable - we love it!

Beans was set up with a toddler at home and a second baby on the way - renovating the whole place while heavily pregnant, because that's how you know an idea's worth chasing.

No investors. No chain backing. Just a full-time job, a two-year-old at home, and a plan to build somewhere that did proper coffee and worked for local parents.

That's the story behind - tucked into the heart of Baschurch, with a "Little Beans" corner so grown-ups can actually finish a flat white while their kids play.
