🔥 Cookery Sessions in East Belfast – PHA Youth Programme Highlights! 🔥

Over the past three weeks, I’ve had the joy of cooking alongside an amazing group of young participants in East Belfast as part of our PHA programme. Every session was packed with energy, curiosity, and seriously impressive kitchen skills!

🍛 Week 1 – Japanese Karé from Scratch
We kicked things off with a flavour-packed start as the young chefs rolled up their sleeves to make Japanese curry completely from scratch. From slicing veggies to building the perfect roux, they nailed every step!

🥙 Week 2 – Healthy Doner Kebab
For week two, it was all about healthy choices. The group learned how to create their own lean, delicious doner kebabs — proving that takeaway favourites can be both tasty and nutritious.

🎂 Week 3 – Sweet Treats
Our final week was dessert heaven. The class whipped up Chocolate Cake with Cherry Glaze & Coconut Cream, followed by a zesty Lemon Cheesecake Mess. The creativity, teamwork, and attention to detail were top-tier.

✨ These young participants truly knocked it out of the park each week. Their enthusiasm made every class a joy, and it was brilliant to see them grow in confidence as they explored new flavours and skills.

🔥 FIRED Cookery School – Silk Road Sessions Wrap-Up! 🔥

Over the past few weeks, I’ve had the absolute pleasure of welcoming incredible carers into the kitchen to explore flavours and stories from across Asia. Together, we travelled along our own “Silk Road” — full of learning, laughter, and lots of good food. ❤️

🥟 Dumplings
We kicked things off with a dumpling masterclass! There were mountains of dumplings and even more smiles. The warm, homely atmosphere gave everyone a chance to unwind, chat, and connect with fellow carers.

🇰🇷 Korean Ban Chan & Bibimbap
Next stop: Korea! 안녕하세요 🇰🇷
Carers got hands-on with Korean ban chan and built their own vibrant bibimbap bowls — a perfect mix of flavour, colour, teamwork, and creativity.

🇨🇳 Hakka-Chinese Cuisine
For our final class before a wee break, we explored Hakka cooking — a culture close to my heart through my father’s side.
“Hakka” (客家) means guest families, reflecting a history of migration and resilience. Carers learned about this rich heritage while diving into hearty, flavourful Hakka dishes.

✨ It’s been inspiring to see carers come together, learn new skills, share stories, and enjoy the joy that cooking brings. Thank you all for bringing your energy, curiosity, and kindness into the FIRED kitchen.

It was a wonderful celebration of cultures, community, and the beauty of our differences. 🌍💫

On the menu, we shared a taste of diversity with:

🍛 Dhal Curry with Roasted Peppers, Naan Bread, Raita & Persian Salad

🍢 Flat Bread with Chicken Skewers served with Tzatziki & Persian Salad

We’re grateful to have been part of such a vibrant day that brings people together through food, fun, and friendship. 💙

CARERS FEST IN KILLOUGH

Newry, Mourne and Down District Council Chairperson, Councillor Philip Campbell, and Grainne Taggart from the South Eastern Health and Social Care Trust joined carers and guests from across the Trust area at a special ‘Carer Fest’ celebration held at Preaching House Pottery in Killough on Friday 13 June. Organised by Newry, Mourne and Down District Council’s Downpatrick, the Mournes, Rowallane and Slieve Croob District Electoral Areas, the event marked National Carers’ Week and recognised the vital contribution of carers in the community. Attendees enjoyed a relaxed and creative atmosphere with activities designed to offer respite and appreciation for the essential role carers play in supporting others.

Yesterday, I had the Carers and we were making Sushi, as we stopped at Japan who benefitted indirectly from the Ancient Silk Road via their trade via China and Korea. They got to learn the history of Sushi, rice preparation and the type of rice used and the techniques. The Carers were amazing and rocked making these sushi pieces! 🍣🍙

Today I had these lovely carers join me for a bout of cookery. We went to Thailand that benefitted historically from the Ancient Silk Road. They made Pad Thai Salad with Peanut Sauce as well as Thai Style Fries Rice. We went through the various sauces from Fish Sauce that is prevalent in Thai Cuisine and how it's made; or Oyster Sauce and the secret to ensuring Rice Noodle doesn't keep "getting longer" forever. 👨‍🍳🇹🇭
