d in to a passion. Over the next few years I spent a small fortune on cake decorating tools, baked cupcakes for my housemate, and spent hours searching Youtube videos to learn new techniques. Four years later I completed a PME Professional Diploma in Cake Decorating, training under the expert tutelage of Leigh Muschette. I started making celebration cakes for friends and family, and then started juggling the odd cake order with the chaos of raising two children. Now, twelve years on - with my nursing career well and truly behind me, and the kids nearly in full-time education โ€“ I can finally return to the workshop. Only this time, I'm on the other side of the table, sharing everything I've learned along the way. I had the absolute pleasure of running a workshop for this delightful group of ladies yesterday. Two mums with their daughters, two work friends and one flying solo. One of the attendees was the winner of my competition at Kings Langley Carnival back in June. ๐Ÿฅณ

It was such a lovely afternoon. Everyone learnt how to use a piping bag and pipe a buttetcream swirl, how to create beautiful decorations using modelling paste and plunge cutters, and learnt how to make a gorgeous sugar rose.

They all did a superb job and were so happy with the beautiful cakes they took home with them.

It's been a busy couple of weeks with entertaining the kids in the holidays, a trip to the New Forrest and redecorating the house, so there hasn't been much time for baking!

But I'm looking forward to getting back in the kitchen since it's had it's glow up! Galley kitchens are not the easiest to navigate when you're baking multiple batches of cupcakes, but at least I have beautiful new tiles! ๐Ÿ˜

The power of a good recipe! ๐Ÿง๐ŸŒŸ

The cupcake on the right was made using a recipe I found on Google. One of those "jump to recipe" baking blogs. It claimed to make 12 cupcakes, but there wasn't enough batter, and it didn't contain enough raising agent. The result? Small, dense cupcakes.

The cupcake on the left is the result of months and months of trial and error.

I've tested countless recipes from books, Google, ChatGPT, Instagram Reels... and, of course, asked my mum. ๐Ÿ˜†

I've spent hours learning the science behind baking and understanding why the ratios of ingredients can be even more important than the recipe itself.

I've tried the creaming method, the all-in-one method, and the reverse creaming method. I've swapped cupcake cases, mixers, different butters, and different brands of flour.

Every tweak taught me something, and little by little, I built my own recipe from everything I'd learned along the way. I like to think I've finally nailed it. ๐Ÿฅณ

A couple of weeks ago, at my stall at the Kings Langley Carnival, this utterly gorgeous little fella guessed correctly how many marshmallows were in the jar. He only went and won himself a box of cupcakes!

With the World Cup in action and him being a football lover, they just had to be football themed - and he was very pleased to receive them in time for last night's semi-final.

I'm pretty confident that beautiful, cheeky smile will cheer you all up after our very disappointing defeat. ๐Ÿ˜ซ

Congratulations also to Helen from the Kings Langley Carnival committee, who won a free workshop in my prize draw. ๐Ÿฅณ If any of the committee sees this, please ask her to get in touch as I'm not sure she's received my email!

This was a quick crumb coat before the fondant went on, but this hack is particularly useful for a finished cake, when you dont want to disturb the beautiful work you've spent ages perfecting. All you need is a cocktail stick and a piece of kitchen roll.

If the icing has dried on to the board, just moisten the end of the kitchen roll with warm water. ๐Ÿ‘Œ

Sometimes, my cake sketches can leave a lot to be desired. So I've started running them through AI to sharpen them up. That way I have a really clear design plan to work from.

A good plan really helps when decorating a cake, and it stops me getting carried away adding extra bits, which I hadn't included in my original quote!

I had so much fun at the Kings Langley Carnival yesterday!

Fortunately, the 30 degree heat didn't keep all the customers away!

Sadly though, I didn't have as many cakes on display as I would have liked as at one point I watched as a beautiful sugar rose slid off a cupcake as it slowmy melted. With the increasing heat, I decided to take my piping bags with me in a cool box and decorate a few at a time. That way, I was able to offer people more than a melted mess!

I've got my feet up in the garden today, enjoying the cooler weather. What a relief!

Huge shout out to the Kings Langley Carnival organisers. They're such a brilliant team and did a superb job of making the Carnival such a great success.
