Imagine you’re so caught up in eating meat that you forget about a whole cuisine, full of flavour and goodness. That was me 7 years ago!
In 2019 I remember bringing home the old Tescos own vegan burgers and cooking up burgers and chips for tea. I made a burger sauce with mustard, ketchup and vegan mayo, bought some amazing burger buns (potentially Make No Bones branded ones, I can’t quite remember???) and added the freshest salad and some pickles. I couldn’t even tell the difference, if anything; it was better. 🍔 I think it was that moment that I thought about burgers none stop. I made it my mission to find more vegan burgers and it opened my eyes to vegan world 🌱
From that moment I think my life took a sharp turn. My health began to improve through my diet. I started to learn about the meat and dairy industry, I started to be more adventurous with food.
1 year later I drew up the first design for Junk Soul. A year after that I did my first event. A year after that I did my first kitchen takeover. And a year after that I opened my first space. In 2024 I opened Junk Bar, a fully vegan bar and kitchen devoted to kindness and respect towards animals.
I’m thankful for that vegan cheeseburger and I really do hope that someone coming into my bar one day, tries a vegan cheeseburger, and it too changes their life. ❤️
