Summer night and pizza. 4 hr proof, 40% strong bread flour, 40% “00” and 20% semolina.
Spice is my thing with pizza so spicy pepperoni, a bit of Nduja and Peperoncino and Piquante Peppers. After baking drizzled with hot honey and chilli oil.

A whistle stop visit to a Bakery in Denmark to see their new innovation in sweet dough pastries and Socials, a larger version of them designed for sharing with friends.
I am seeing these in some bakeries in London now and it’s a great concept….one for the retailers perhaps?

This weekend I have been testing recipes for Sourdough for bakery, and I think this could be the one. Using their own Starter, I am really pleased with these.

What a find this place is in Hull. has the best Slutty Reuben bagel I have in a long time, along with a great flat white…..one to head to without a doubt.
