SPEY Chairman's Choice PX — A Secret Sealed in Sherry

Year after year, each heir to this old distilling family has refined here the whisky of their ideal, and given it the name Chairman's Choice.

One Christmas Eve, the Speyside Distillery met a moment of quiet inspiration — the head distiller came upon a forgotten parcel of Spanish Pedro Ximénez sherry casks, resting deep in the cellar, their surfaces worn with years, as though waiting for the light again. At his side, the SPEY Chairman eased open a b**g, and out drifted raisin, honey and spice, slow and unhurried. In that moment the two exchanged a glance — nothing needed saying — and Chairman's Choice PX was born.

Each Christmas Eve, the SPEY Chairman keeps a family tradition: stepping alone into the private cellar to choose the most moving whisky of the year, offered to the world under the name Chairman's Choice. Now, that tradition is given a new soul — for the first time interpreting this enduring art through Pedro Ximénez sherry casks.

To mark it, SPEY invited whisky writer Charles MacLean to be the first to taste Chairman's Choice PX. As its delicate aromas and flavours unfolded layer by layer, he gave it his verdict: "It's a very good whisky, frankly very moreish."

SPEY Chairman's Choice PX — A Secret Sealed in Sherry

Born on Christmas Eve, a miracle as sweet as honey — the purest distillation of SPEY's art. Chairman's Choice, a name with a long history, takes on a wholly new character: matured to its close in rare Spanish Pedro Ximénez sherry casks and American bourbon casks, and named Chairman's Choice PX.

Chairman's Choice PX Single Malt draws on Pedro Ximénez sherry casks from the Ximénez-Spínola Bodega — a Spanish house of 280 years — married with bourbon-matured whisky to create a radiant amber spirit, rich in fruit and finely layered. On the palate, sweet pear, raisin and baked apple unfold; the finish carries the sweetness of dark chocolate, deep and long — a full expression of the deep, rich sweetness of PX, the king of sherry casks.

Brume Dorée—meaning “Golden Mist”—showcases innovation in French cooperage, with hand-selected 400-litre French virgin oak casks crafted by the renowned Tonnellerie Quintessence. These casks were chosen specifically by our team for their size and precise toasting level. Tonnellerie Quintessence’s signature mist-toasting technique —using a delicate water mist and controlled heat— gently opens the wood’s pores, enhancing the whisky’s interaction with the oak.

Every drop of SPEY 12 Years Old Golden Mist begins with a 120-hour fermentation and slow distillation, before maturing for 12 years and finishing in these specially coopered Brume Dorée French oak casks.
