A day of bringing our sun-dried tomatoes back to life!

These little beauties have been salted and dried, and today they’re getting some much-needed attention to bring them back to their wonderfully rich, intense and delicious best.

They smell absolutely incredible — and instantly transport me back to southern Italy, where rows of tomatoes would be laid out in front of the old houses in the historic streets, left to slowly dry in the warm sun.

It’s such a simple, traditional way of preserving the summer harvest, and one of those things that makes you appreciate just how much flavour can come from good ingredients, patience and a little sunshine.....shame it's raining here today!x

Today Paolo made us a typical southern Italian Ziti con Sugo alla Carne, and it brought back such lovely memories of his nonna and aunts preparing this dish.

Slow-cooked meat (pork ribs in this case) gently simmered for hours in a rich tomato sauce until the meat is beautifully tender and the sauce is full of flavour.

Traditionally, the sugo is served with the ziti as the primo, followed by the slow-cooked meat as the secondo, two dishes for the price of one!

For us, this dish encompasses everything we love about Italian cooking, good, quality ingredients, treated simply with care, and authentic recipes.

It sounds easy, and that's the beauty of it. But getting that simplicity just right isn't always easy.x
