Heritage breeds benefit from slow cooking. Due to the breed, feed and maturity, they are full of flavour unlike ubiquitous supermarket lamb. You can further enrich your dish with added roots and/or a bottle of local ale or the lovely Orkney W**e if wished.

An unexpected result of our Shetland holiday was a training session with shepherd Cecil for Peggy ..... and then beyond grateful that Ian (with T's help) has built us our own training ring!! now to chose which handful of sheep will be steady enough for Peggy and I to learn with!!

Been a busy few days.. proud of our Borerays and these ewes have been lovely. Sadly time to say goodbye to them ... know them all by name and who their daughters are... know they will be well looked after on their onward travel. Hoping Amelias (8y) daughter (and Christines 6y full sister) Doris 5y becomes matriarch as she is a lovely gentle ewe who is very steady.
