To complement Head Chef Will’s menu at Hovels, we’ve teamed up with prestigious wine merchant Corney & Barrow, who have selected four exceptional wines to accompany each course.
Gathering’ Sauvignon-Semillon, The Lane 2021 | Adelaide Hills, Australia
Grassy and bright, with ripe lime, refreshing minerality and a beautifully creamy finish. An elegant expression of a classic white Bordeaux blend.
Paired with: Mackerel, kohlrabi & iced mackerel bone broth.
Aus den Lagen Riesling, Weingut A Christmann 2023 | Pfalz, Germany
White peach and tangy citrus meet orange blossom, tangerine rind and stony minerality. Fresh, vibrant and beautifully precise.
Paired with: Scallop, rhubarb nam jim & shiso
Brunello di Montalcino, Ridolfi 2018 | Tuscany, Italy
Rich and elegant, with dark berries, cherries, violet, sweet spice and balsamic notes, balanced by fine, salty tannins and a long finish.
Paired with: Lamb loin, belly, sweetbread & wild garlic honey, grilled lettuce & pea.
Zweigelt Auslese, Weingut Kracher 2023 | Burgenland, Austria
A delicate dessert wine bursting with ripe red berries, dried apricot, strawberry and orange zest, finishing with juicy black berry fruit and fine spice.
Paired with: Strawberry, cicely & meringue.
With a longstanding commitment to quality and provenance, Corney & Barrow have built relationships with some of the world’s finest producers and are proudly the only wine merchant to hold two Royal Warrants.
Four exceptional wines. Four carefully considered pairings. One indulgent Hovels experience.
