Hello everyone. I don't post as many of my vegan culinary creations on here as often these days, however, I couldn't resist sharing today's brunch recipe with you.

Roughly dice 2cm cubes of 2 new potatoes, a red or green pepper, a couple of tomatoes and a red onion. Place in one layer on a roasting tray. Shower them with chilli flakes, mixed herbs, smoked paprika, sea salt and black pepper. Slather with olive oil and roast for 15 mins at 180 degrees.

Nice on its own or stuffed into a pitta bread with salad. Enjoy!

Pasta Arabiata
Fry red onion, fresh chopped tomatoes and sliced mushrooms in olive oil. Add sea salt, freshly ground pepper, chilli flakes, smoked paprika and mixed herbs. When cooked scatter fresh spinach over to wilt. Meanwhile, boil, strain and serve al dente wholemeal pasta. Top with the vegetable mixture and grated vegan cheddar.
Taste sensation!

For those of you that are unaware, I sell olive wood kitchenware on Cambridge market and offer a personalised engraving service using the freehand art of pyrography. I was delighted to engrave a spatula today which was bought as a gift for a 12 year old who's passionate about cooking vegan food. I hope some of the recipes on here inspire them and also that they love their olive wood spatula. I love my job!

I made a nice soup from store cupboard ingredients and leftovers. Here's a modified recipe for 4 portions.
1 pack vacuum packed beetroot
1 sweet potato
Seasoning- I used nutritional yeast, mixed herbs, smoked paprika, sea salt and ground black pepper.
Drain the beetroot, save the liquid.
Bake the beetroot and sweet potato until softened.
Remove the skin from the potato.
Chop veg and put in saucepan with beetroot juice, seasonings and some water. Blend. Adjust texture and heat through. It's another taste sensation and a beautiful colour.

Hello everyone. I've just created another slant on vegan chow mein; so good I thought I'd share it. Pre- heat the oven to 180. Cut 1/4 cauliflower into tiny florets, peel and 1/4 a few mushrooms, finely slice or chop a little onion, then add a handful of cashew nuts. Roast all of this with a drizzle of olive oil for about 15 minutes. Cook a few frozen peas. Cook some rice noodles. Strain the peas and noodles. Stir in the roasted ingredients and splashes of soya sauce. That's it! Enjoy
