Barrel Aged Plain Dark Beer - Daftmill Edition

Here is our latest Barrel Aged Plain Dark Beer! Last year we brewed up some more PDB and popped a small portion of it into a couple of barrels from Daftmill Distillery over in Fife. We were super excited to get our hands on a couple of their barrels. In my opinion, they’re creating some of the most delicious whisky Scotland has to offer. And they’re a lovely bunch of people!

🏴󠁧󠁢󠁳󠁣󠁴󠁿🍻 Reid’s Lager 🍻🏴󠁧󠁢󠁳󠁣󠁴󠁿

Our final collab for this years Burns celebrations is Reid’s Lager, brewed with our absolute favourite, Pete from in Copenhagen.

We’ve known Pete since our London days while he was brewing with Beavertown, and we’ve had the pleasure of his visits to our taproom whenever he travels back to Scotland for family visits. We decided to brew this beer together in celebration of our joint love of classic Scottish lager.

For Reid’s Lager, there’s a decent amount of raw landrace wheat grown in Fife along with some Herkules hops from a particularly aromatic batch to make this an absolute belter.

Our next collab for Burns night is Screich! We brewed this with our good pal Robin who has just started his very own brewery . Drawing on Robin’s tenure at Beak, we’ve brewed a Scot’s twist on a NZ hazy pale. 
We used a base of bere barley from the Borders, raw landrace wheat from Fife and luxurious flaked oats from Perthshire, and then hopped heavily with Motueka from the Sunrise Valley.

🏴󠁧󠁢󠁳󠁣󠁴󠁿🍻Auld Ale - Northern Monk Collab🍻🏴󠁧󠁢󠁳󠁣󠁴󠁿

As part of our Burns celebrations, we’ve brewed a few collabs with Scottish brewers who have breweries elsewhere. We had Brian from come home to Scotland to brew this hybrid between the classic malt forward beers of Scotland and Yorkshire. 

Starting with a smooth malt-rich base, we fermented this Auld Ale in whisky barrels before an extended conditioning. A warming, complex, and historically resonant ale!

Last December we invited our pals from , , and to brew a modern Scottish IPA to celebrate the one and only, Robert Burns.

Mega Burns is an up-to-date interpretation of historic influences from Scottish brewing. An IPA brewed with lager yeast, foraged herbs and a blend of UK and American hops.

Scotland has long been lager forward brewing country and a particularly adventurous and inventive place for brewing. We’ve incorporated some Yarrow and Bog Myrtle as a nod to pre-industrial brewing. The Harlequin, Mosaic, Simcoe and Cascade hops hark back to Edinburgh’s Victorian brewer’s liberal use of ingredients from all over the world.

🏴󠁧󠁢󠁳󠁣󠁴󠁿Burns Beers 2026!🏴󠁧󠁢󠁳󠁣󠁴󠁿

For the third year in a row we’ve teamed up with some pals to bring you a range of tasty treats to celebrate the end of gloomy January and Scotland’s bard!

We’ve gone with a bit of a twist for the beers this year! We’ve invited some friends from far and wide that originally hail from Scotland to come back home and make some beer.

came to town to make a Scottish style lager with loads of raw wheat and flaked barley. Super crisp and I’ve been nicking loads of cans for the house.

joined us to make a super juicy NZ hazy IPA with all Scottish barley. Everything as close to the farm as possible.

For our brew with we made a BARREL-FERMENTED 👌 take on the middle ground of Edinburgh and Yorkshire brewing. Inspired by classic Scotch Ales, Stingos and Old Ales.

We’ve done a multi-brewery collab with all of our Scottish pals from years past. and all came down together and we each added some aspect of historic Scottish brewing to a modern IPA recipe.

Then we’ve got two returning faves for good measure! 60/- on cask and Barrel-Aged Plain Dark Beer! I’m super excited about this round of our PDB as in aged in casks from the absolutely unmatchable . It’s definitely (and unsurprisingly) the best batch yet.

🐶RYDER IPA🐶

Our latest IPA has arrived on the scene, and this one is named after a very special boy, Ryder.

Ryder was raised by Annie and Douglas, Gordon’s Mum and stepdad, to become a guide dog. They raised him to be an overall good boy before going off to his training school to learn all the tricks of the guide dog trade. Not long into his official training, it came to light that a Ryder has a health condition which meant he couldn’t continue his journey to become a guide dog. And so he came back home to live with Annie and Douglas for good.

It’s a shame he wasn’t able to continue with his training, but I think it’s safe to say that we’re all so happy to have him in our lives. Skirlie and Buddy adore his company too 🥰

Ryder IPA is a big hop salad with Citra, Centennial, Simcoe, Chinook, Nelson Sauvin and Hallertau Blanc. Packed full of hops but still fairly easy going at 5.5%.

Pouring in the taproom this week, on the webshop and out and about at all your favourite beer shops.

But just like every other winter, it is indeed here again! Just like our 2025 edition of Plain Dark Beer. All the goodness of a warming, hearty imperial stout, big liquorice vibes with a roasty chocolate finish. Keeping it simple but delicious as always.

🍻🥇Champion🥇🍻

This autumn we see the return of our brown ale, Champion, brewed by our brown ale loving champ Rick.

This one is perfect for those cosy nights gathering in the pub with friends for your long overdue catch-ups you’re trying to squeeze in before the end of the year… which is coming round fast! Champion is a lovely rich 5.2% brown ale. Not too rich though, just enough to feel like a hug in a pint but not a weird clingy lingering way. Just an all round joyous beverage!

Pouring in the taproom this week, on the webshop and is already out and about in the top beer stores across the country.

🌚🌝Full Moon Harvest🌚🌝

Full Moon Harvest 6.8% is a NZ IPA, packed with Nelson Sauvin. This beer, with help from our supplier is brewed with hops picked between 20.15 and 21.45 in the evening on March 14 2025 NZ time, while the moon was in total eclipse. Expect clean body and lots of flavour.

🍻🐾Billie IPA🐾🍻

Billie’s Bier Kafetaria in Antwerp, owned by Stefan and named after his beautiful French Bulldog Billie opened its doors in 2013. Sadly Billie passed away in 2021, but his legacy lives on through Billie’s Beer Festival which is held every November.

Each brewery attending the festival is asked to brew a special beer to commemorate this special wee guy, and we are delighted to be involved in this years festival.

Billie IPA was brewed using barley grown local to us in East Lothian and malted by Crisp. And entirely hopped using Strata ✨

Come buy for a glass of Billie IPA and show us pictures of your dogs 🐶🐾
