Every batch starts right here on the block. Cure rubbed in by hand and left to cure slowly the way it's meant to be done.

No shortcuts. No shortcuts mean no corners cut on flavour either.

We cure our bacon in EIGHT flavours, all made here in Shetland. You won't find these on a supermarket shelf, and that's exactly the point.

People are always surprised when they taste the difference. Proper marbling, proper cure, proper bacon.

What does a butcher do with his time off? He goes back to his roots helping on a farm to train the next generation of young farmers in essential maintenance.

This week has been spent in Caithness. Helping out friends at Campbells Dairies while the butchers wife is busy doing IACS in the county.
