About 15 years ago I catered my first ever at the magical Tilton House and it just so happened to be with the powerhouse that is Naomi Absalom and here we are all those goes around the sun later, still doing our respective thang ❤️

Really excited to announce a Cashew takeover at the incredible - expect: new ideas, big flavours & glorious colours from me and the beautiful setting, big buzz and high class service that is Moshimo.

This is a first for both parties and a truly unique experience in one of Brighton’s most iconic restaurants.

As 2026 winds down we’d love to wish you a Happy Solstice - and thank everyone who supported over the year!

Quick trip up to London last week to help .earth host an away day - brainstorming new ideas and wearing Christmas jumpers (sadly no jumper pics) at the beautiful Mike End Ecology Pavilion

Simple service of teas, coffee, pastries and some doorstep sammies:

Hummus, roasted pepper and rocket on a chewy brown
Caramelised red onion, Brie & gem lettuce on a white sourdough
Smoked cheddar, cucumber & tomato Ona seeded sourdough

So good to be back in the kitchen for the Great Vegan Challenge, the evening didn’t disappoint and I’m very excited to say we took the win.

Massive thanks to Moshimo for putting this event on again and for being such great hosts - big shout out to all who took part and those who came out to enjoy the fun.

In typical JB style I didn’t take any pictures at the point of service (you know - busy) so here are some great pictures I did take earlier in the evening and then some borrowed pictures from more organised people!

Events like these do so much for the community on the whole and give and the opportunity to connect and share ideas and knowledge plus have a little fun.

Super excited to be heading to tonight for the 2025 Great Vegan Challenge, looking back my first attempt was 2011 at the 2nd time the event ran. Last attempt was pre lockdown and I was lucky enough to scoop a win - so looks like we have a title to defend ! 🤞🏻

Super fun menu including:

Barbecue kale chips w avocado puree, lemon gel & garlic aioli 🥑

Chestnut mushroom & almond soup with truffle cream, thyme oil & Sage crisps 🍄‍🟫

Barbecue tofu, barbecue .farm corn, barbecue tenderstem, hasselback potatoes, crown prince & a sesame and white miso emulsion 🌽

Hazelnut ganache tart, vanilla ice cream and salt caramel sauce 🍫
